(Recipe of the Week) An easy shrimp salad recipe that tastes just like ceviche but without all the work! It's light and refreshing, and packed with flavor.
Easy Cilantro Lime Shrimp & Avocado Salad

Ingredients
1 lbs. frozen precooked shrimp (thawed, tails taken off & cut into thirds)
1-2 avocados, diced
½ cup cherry tomatoes, halved or quartered
¼ cup red onion, finely chopped
¼ cup cilantro, chopped
3 limes, juiced
Salt and pepper, to taste
Instructions
Add your chopped shrimp, avocados, tomatoes, red onion and cilantro to a large bowl and season with salt and pepper. Then add your lime juice and toss the salad until it's fully coated.
Place your salad in the fridge to chill or serve it immediately over greens or with grain-free chips.
If prepping this salad for the later: Keep your avocado separate from the rest of your ingredients and add it right before serving.

(Recipe of the Week) Egg bakes make quick, filling, and wholesome meals. Make one and have easy snacks and lunches all week!
Sausage Egg Casserole with Veggies

Ingredients
1 large sweet potato diced into 1/4 inch chunks
cooking spray olive, avocado or coconut oil
1 pound ground breakfast chicken or turkey sausage
2 teaspoons olive or avocado oil
1/2 cup chopped onion
2 cups sliced fresh mushrooms
1 cup chopped red bell pepper
2 cups torn kale
2 teaspoons dried thyme
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
12 eggs
½ cup unsweetened coconut milk or non-dairy milk
Instructions
Preheat oven to 400°F.
Spray sweet potato chunks with cooking spray and roast in the oven until tender, about 30 minutes, tossing at the halfway point.
Meanwhile, cook sausage in a large skillet over medium-high heat until no longer pink, about 5-7 minutes. Transfer sausage to a bowl and add 2 teaspoons of oil to the same skillet. Once hot, add onion, red bell pepper and mushrooms to the skillet. Cook until onions are translucent, about 6-7 minutes, then add kale. Cook for another 2-3 minutes to allow kale to wilt. Remove from heat and transfer veggies to the bowl with the sausage.
Add to the roasted sweet potato into the bowl as well.
Whisk eggs, milk, thyme, garlic, salt and pepper together in a medium bowl. Add egg mixture to the sausage and veggie mixture. Pour into a large baking dish (9 X 13) sprayed with cooking spray.
Bake in the preheated oven until set, about 20 to 25 minutes, but the cook time will depend on the size of your baking dish. Let stand for 5 minutes and serve.
Store leftovers in an air-tight container in the fridge for 4-5 days.
Note: This dish is approved for the 30-Day Metabolic Comeback Challenge provided that breakfast sausage contains no added sugars. "Although I’m active, my doctor had suggested strength conditioning. Since joining The Exercise Coach, my core strength, muscle tone, physical strength and endurance have all improved. The team mix the routines to keep the sessions interesting while working on different muscle groups. The atmosphere is like having a home gym with a fitness coach. The space is clean and inviting with a variety of high and low tech exercise equipment. They offer both individual and group settings. Groups are small (2 to 4 people per work session) so you aren’t waiting to use the equipment or feel like you are lost in the crowd.
A big attraction of The Exercise Coach program for us was the 20-minute workout period. In all honesty we don’t have the time nor enthusiasm to make a 60 to 90 minute commitment at a traditional gym. We couldn’t purchase all of the equipment for a home gym, let alone have a coach come to the house. We set up sessions twice a week and they have been flexible when we needed to adjust due to unforeseen conflicts. After the trial sessions, it was clear to us that you can get a great workout in a 20 minute session. The minimal time commitment and accountability of having a coach helps maintain the habit of working out. Ultimately, the effort and intensity you put in to the program steers the results you achieve. We have found the TEC program is a time efficient approach in helping you achieve your health and fitness goals."

"I have been a client for about 8 months. I have MS and had to do something. I was getting weaker and walked with a cane. I figured 20 min., 2x a week, that I can do. Well, in 8 months I can tell a huge difference in my strength and how I walk, especially not having to use the cane 24/7! I am so thankful I found this place and cannot recommend it enough.
