Shrimp Taco Bowl 🤤
If making this recipe, I highly suggest going in this order for maximum flavor! It took me about 30 minutes or less to make this delicious meal.
Pickled Jalapenos/Onions:
2 jalapenos
1/4 onion
1/4c Red wine vinegar
1/4c white wine vinegar
1/2c water
1tbsp dill
1/2tbsp garlic, minced
1/2tbsp peppercorn, whole
1tbsp sugar or sugar alternative(I used stevia)
Combine all ingredients other than jalapenos and onions. Bring to a boil and add jalapenos and onions. Remove from heat and bring to room temperature.
Pico De Gallo:
1/2 can diced tomatoes with green chiles, drained
1/4c onion, diced
1/4c cilantro, chopped
1 lime, juiced
garlic, salt and pepper to taste
Combine all ingredients and set aside
Spanish Rice:
1c rice
1c water
1/2 can diced tomatoes with green chiles, drained
1tbsp taco seasoning
1tsp tumeric
salt and pepper to taste
Combine all ingredients in InstantPot and cook on high pressure for 4 minutes. Allow to natural release for 10 minutes. Stir thoroughly before serving.
Black Bean Mash:
1 can black beans, drained and rinsed
1 lime, juiced
salt and pepper to taste
cilantro(optional)
While rice is cooking, heat up beans with lime juice, salt and pepper. Mash to desired consistency. Remove from heat and add cilantro if you'd like.
Shrimp:
4oz shrimp
1tbsp taco seasoning
Sauté shrimp with a spritz of avocado oil and taco seasoning. Cook through.
Assembly:
1/4c each of rice and beans
place shrimp in center
sprinkle pickled jalapenos and onions around shrimp
dice 1/2 small avocado and put to side of plate
Add pico de gallo to the center

*2 tablespoons sesame oil
* 6 green onions sliced, green and white parts divided
* ½ cup onion diced.
* 5 cloves garlic minced
* 1 pound ground turkey
* 1 teaspoon fresh grated ginger
* 1 tablespoon sriracha or any hot sauce
* 1 14-ounce bag coleslaw mix
* 3 tablespoons low sodium soy sauce
* 1 tablespoon rice wine vinegar
* ⅛ – ¼ teaspoon pepper
* salt to taste
1. Heat sesame oil in a large skillet and place over medium heat. Add white parts of green onions, diced onion, and garlic and saute, stirring frequently, until the onion begins to soften, about 5 minutes.
2. Add ground turkey, grated ginger, and 1 tablespoon hot sauce and cook until turkey is cooked through about 7-10 minutes. Make sure you are breaking up the turkey into small pieces.
3. Add coleslaw mix, soy sauce, rice wine vinegar, white pepper, and salt, to taste, and stir until well combined. Cook, stirring regularly, until cabbage is tender, about 5 minutes.
4. Top with BangBang sauce or make your own creamy hot mayo and the greens of the green onions!
