I LOVE teaching my morning Zumba class SO MUCH! I am just in awe of how blessed I am by the women in the class. They are incredibly genuine, loving and encouraging women and have so much JOY! ❤️❤️❤️

Guess what ladies?!? You asked for a permanent class so it’s happening!!! 🎉🎉🎉 This fall season I will be postin up at Identity Dance Studio every Monday night at 6:30pm ready to let loose, laugh and shake it with y’all!!! This starts TOMORROW!! 😆😆😆
Seriously, I have SO MUCH fun with y’all and all of your amazing energy and smiles bless me beyond measure!! So I want to make sure that anyone who wants to join doesn’t miss out and will be keeping the classes donation based❤️ (There’s a $5-$15 suggested donation, but I truly don’t want anyone to feel pressured and glad accept smiles too! 😄☺️😆💗)

Meal Monday ✨
Ingredients for Salsa:
1 large peach, pitted removed and diced
1/2 medium red onion, diced
1/4 cup cilantro, finely chopped (or more/less to taste)
1 serrano pepper, seeds removed and diced
juice from 1 lime
1 tablespoon avocado oil
sea salt & pepper to taste
Ingredients for Chicken:
1lb raw chicken breast
4 tablespoons chipotle in adobo
1 tablespoon The Fit Cook Everyday garlicky herb seasoning
OR 2 teaspoons onion powder, 1 teaspoon garlic powder
1 teaspoon cinnamon
pinch of pepper

Meal Monday ✨
Ingredients for 5 servings
Sauce
2 tablespoons finely minced or crushed pineapple
1/4 cup fresh pineapple juice (if using can, select one with NO sugar added)
3 tablespoons low sodium tamari or soy (more/less to taste)
1 tablespoon mirin (optional but recommended)
3 tablespoons coconut sugar
1 tablespoon fresh ginger, minced
1 tablespoon Sriracha (optional)
Slushy – 1 tablespoon arrowroot mixed with 2 tablespoons water
Rice Mix
2 cups cooked brown rice
1/3 cup finely minced cilantro
2-3 tablespoons fresh lime zest
1 tablespoon (vegan) butter
1 1/2 lb chicken breast, cut into 1/2-inch cubes
1 teaspoon sea salt
2 teaspoons (white) pepper
1 tablespoon arrowroot (OPTIONAL)
spray avocado oil
1 red bell pepper, diced
2 green onion stalks, chopped
garnish

Yesterday’s workout crew!!!💪🏼💪🏽 A couple ladies showed up lacking some energy, but we got to work and they ended up with a pep in their step and we laughed along the way too!!! Love these ladies so so much and am so honored to train with them! ❤️❤️❤️
