If there is one thing we love... it's a one-pan recipe that is healthy, simple, and balanced without leaving loads of dishes in the sink!
This One-Pan Spring Veggie Hash is packed with fiber, protein, healthy fats, and colorful vegetables to help support energy, recovery, and overall health… all while keeping things realistic and easy for busy schedules.
🥘 One-Pan Spring Veggie Hash with Crispy Eggs
Serves 2–3
• 1 Tbsp olive oil
• 1 small sweet potato, diced small
• 1 bell pepper, chopped
• 1 small zucchini, chopped
• ½ small onion, sliced
• Salt + pepper
• ½ tsp garlic powder or smoked paprika (optional)
• 4–6 eggs
Optional add-ins:
Fresh herbs, feta or goat cheese, avocado, leftover chicken or sausage, white beans, or chickpeas
➡️ How to make it:
Heat olive oil in a large skillet over medium heat. Add sweet potato and cook 6–8 minutes, stirring occasionally, until it starts to soften.
Add onion, bell pepper, and zucchini. Season with salt, pepper, and spices. Cook until tender and lightly browned.
Make small wells in the veggies and crack eggs directly into the pan. Cover and cook until whites are set and edges are crispy.
Serve straight from the pan and enjoy! 🍳

Come out and enjoy live music, food trucks, and community EVERY Friday in May with Music on the Green!
May 15th - Stolen Whiskey: A Chris Stapleton Tribute Band
May 22nd - Steel Rose: A 70's and 80's Classic Rock Band
May 29th - Raised Right Men: Country Hits
A few reminders for Music on the Green:
- The South Pool will close be closed from 6:00pm - 9:00pm the day of Music on the Green
- No animals are permitted to be on the Town Green during Music on the Green
- No sports balls allowed on the Town Green during the event, to avoid disruption of the band and other attendees
-No Golf Carts or Motorized Vehicles of any kind are allowed on the Town Green.
