Hey everybody, Willie here!
Both Jack and I started farming to transition toward REAL FOOD, toward what we see as a connection to the rest of the world, and toward a genuinely brighter future personally and globally
Now that we work together on Holy Hills our mission is to help make the transition to REAL FOOD as easy as possible for those we love, and those we are soon to! That includes offering our help along the way with the compassion of somebody who is making the journey and understands just how difficult it is, and that it never really ends. We're just here to help you take the steps you're excited about, some we'll probably even take together!
Here I wrote out the pillars of what we see as REAL FOOD, to help make the path a little clearer to see :)
Have a good one, and Have Faith in the Land!
What IS Real Food Anyway? — holyhillsfarmco J. Willie Clark Libraries, bookstores, and especially the internet are filled to the brim with food-philosophies and diets of all sorts (some of which you can’t help but wonder if anybody actually follows regardless of how righteously adamant the author seems about it being the o

Howdy y'all!
Hanukkah is already past and Christmas is just a few days away. Coming in hot!! Are you're still doing last minute shopping because you just can't figure out what to get your family? Well Willie wrote up a conservation gift guide, and nothing on the list is more than ~$25 so you can really fill out the bottom of that list! All while doing right by our furred finned and feathered friends!
We hope you're having a wonderful holiday and we can't wait to see y'all soon!

Hey y'all
Thanksgiving is just a week away, and the holiday season is already up and away. I'm so excited! We had you, and your sanity in mind so I wrote up a an easy checklist to make this thanksgiving as fun and stress-free as possible!
T-Day Countdown — holyhillsfarmco An easy Thanksgiving Plan and Countdown Schedules get a bad rap, even though plans are the (often unsung) hero of any event. Here, though, plans, schedules and low stress partying gets its due in veneration. Every; party, event, evening out, (and often evenings-in) require some level of planning.

Hey y'all, Willie here!
I was lucky enough to attend Greg Judy's grazing school this September! I came back with some farm knowledge, but also a good amount of personal growth...

Now that our first season's coming to an end, and all the pigs have found freezers, we just want to express how grateful we are for all the support we've gotten in just these few months. As a part of that gratitude I want to share some tips on how to get the most out of the natural flavor of ours (or any) meat. This weeks blog post is all about the basics of cooking meat for the fullest flavor possible - searing- and how to perfect it. I hope you have a great time enjoying our food, and I hope it bolsters your Faith in the Land.
The Ol’ Sear ‘n Bake, 5 Essentials to Getting it Right — holyhillsfarmco by J. Willie Clark When I began eating pastured meats for health reasons, it still seemed somewhat luxurious, and certainly privileged to be able to make the switch to high quality meats regardless of how necessary it was. Because of this I developed a funny anxiety that I wasn’t cooking

So our first season is drawing to a close, and we're so grateful that you're giving us the opportunity to serve you. There's nothing like knowing that you're going to be enjoying our food in no time at all.
For those of you who didn't pull the trigger this season, we understand why, and that's why we wrote a list to make it a little less daunting an idea next year!
Thank you, and have Faith in the Land

We love to provide things. It makes us feel useful, and right now we get to provide you with the kind of quality you just can't get at the grocery store. Our pigs are healthy BECAUSE the land is healthy, and frankly we're happy because the pigs are happy. I think you will be too when you're savoring meat that's a product of having Faith in the Land.
This weeks post is a deep dive into how we team up with our pig buddies to promote healthier landscapes!

It certainly has been a heck of a year so far, and hope can be as hard to find as some groceries. There is always something to look forward to, though, and it looks like 2020 is no exception! A few old laws are going to be providing outdoor fun and adventure for decades to come, and I'm pretty darned excited about it!!
The Brighter Side of 2020: A Bumper Year for Conservation Funding. — holyhillsfarmco If you’re interacting with another person regularly (or at all,) you’ve probably heard, and likely expressed yourself, what a flop of a year we’re all experiencing together. It’s been a dead man's hand between a global quarantine, mass protests, and an unexcitable election looming here...

Hardly a day goes by when I don't think of how lucky I am to be working at the crux of conservation and agriculture by improving the land through careful planned grazing. Not everybody can run a passel of pigs trough the oak woods to turn last years acorn into fertilizer, but there ARE a lot of things you can do. That's why I started writing about private conservation in our blog, to prove that it doesn't take a degree to make an impact on wildlife, in fact you already are.
If you find yourself with some extra time on your hands, or you've been itching to help out the fauna around you then you ought to take a peep at this weeks post. If we all learned to help out a little bit all the time I think we could have more faith in the land.
