π₯ Recipe of the Week: Harvest Turkey & Sweet Potato Skillet
A cozy one-pan dinner that pairs lean ground turkey with sweet potato, bell pepper, and spinach β warming enough for cooler fall evenings and easy enough for a weeknight after class. π
π Prep: 10 min Β· Cook: 20 min Β· Serves 4 (about 1.5 cups each)
π Ingredients: β’ 1 tbsp olive oil β’ 1 lb lean ground turkey β’ 2 cups sweet potato, peeled and diced small (about 1 medium) β’ 1 small yellow onion, diced β’ 1 red bell pepper, diced β’ 2 cloves garlic, minced β’ 1 tsp smoked paprika β’ 1/2 tsp ground cumin β’ 1/2 tsp dried thyme β’ Salt and pepper, to taste β’ 1/4 cup low-sodium chicken broth (or water) β’ 2 cups baby spinach β’ Optional: crumbled feta or shredded cheese, for topping
π©βπ³ How to make it: 1οΈβ£ Heat the olive oil in a large skillet over medium heat. Add the sweet potato and cook, stirring occasionally, for 8β10 minutes until it begins to soften. 2οΈβ£ Add the onion and bell pepper; cook 4β5 minutes more until softened. 3οΈβ£ Push the vegetables to one side of the skillet, add the ground turkey, and cook, breaking it up with a spoon, until no longer pink, about 5β6 minutes. 4οΈβ£ Stir in the garlic, smoked paprika, cumin, thyme, salt, and pepper; cook 1 minute until fragrant. 5οΈβ£ Pour in the broth, cover, and simmer 5 minutes so the sweet potato finishes cooking through. 6οΈβ£ Stir in the spinach and cook just until wilted, about 2 minutes. 7οΈβ£ Taste, adjust seasoning, and serve warm, topped with feta or shredded cheese if using.
