I love curry! I feel like a lot of people have the mindset of curry = curry powder + coconut milk. Get outta here!

This is a staple on our menu and one of my favorites. This is a vegan version of Butter Curry, so no butter or even fake chemical butter. 👍🏻 The recipe is out of “Vegan Richa’s Indian Kitchen.”

Here are the changes I made to the recipe:
I use 8.5oz dry soy curls (soak them in water for 15min) then double up on the spices for the “Seitan” portion of the recipe. I also use a cup of plant based milk for the richer sauce, but I also add about 1/4 to 1/2 cup of water to make the sauce smoother and saucier.
