My Costco Senoma Chicken salad reproduction. Made with Greek yogurt rather than mayo. Super easy!

Sweet onion, small dice... about a 1/3 cup
2 stalks celery, chopped
2 green scallions, sliced thin
1/4 cup fresh parsley, chopped fine
Tablespoon or so of apple cider vinegar
Cup of full fat plain Greek yogurt
1 cup red grapes, cut in half or quartered
1/4 cup pecan pieces
The breasts & thighs of a rotisserie chicken, chunky dice
Salt and pepper

Mix it up. Let the flavors combine for a couple hours. Serve in lettuce wraps or on a grainy bread.

Note: I like it tangy. The sweetness from the grapes, sweet onion and pecans is enough for me. If you like, use a portion of mayo instead of yogurt. And or back off on the apple cider vinegar. Up to you!

Wendy Nickell inspired me to use my sweet pepper RAW so I did a little Greek-salad inspired side dish with my sunnyside up eggs with salt, pepper & dill plus a little smoked salmon.

My leftover steak and mushrooms from my anniversary dinner made a great breakfast with eggs & pepperjack cheese. Budget & keto friendly!

Honey wanted Red Robin for lunch. I choose the Southwest Salad. Minus the black beans, tortilla strips and add extra avocado. Pretty good! There was corn & carrot shreds hiding in it I just more or less ate around.

As simple as it seems, one of the best pieces of advice I can offer for daily overall health & wellness is: DRINK MORE WATER.

Water is truly the key to life. Everything functions better, you look better and feel better fully hydrated. Don't worry about peeing too much. Your kidneys and bladder will catch up to the increased hydration. 💦

Your body will do what you train it to handle, for the most part. Doing it wisely and intentionally is best. I recommend reading this and start incorporating the info & tips.

How Long Does It Take an Athlete to Acclimatize to Heat?

The process starts in the first few days you’re exposed to increased temperatures, as long as you’re exposed to the heat for at least an hour each day over the course of consecutive days. It takes between 10-14 days to be completely acclimated to the increased temperatures.
