🍩 AIR-FRYER BLUEBERRY COTTAGE CHEESE DONUT HOLES
Soft in the middle, lightly golden outside, and made right in the air fryer.
INGREDIENTS
• 1/2 cup / 113g whole-milk cottage cheese, strained very dry
• 1 large egg
• 2 tbsp / 30ml pure maple syrup
• 1/2 tsp vanilla extract
• 1 cup / 96g superfine almond flour
• 1 tbsp / 7g coconut flour
• 1/2 tsp baking powder
• Pinch of fine salt
• 1/3 cup / 50g small fresh blueberries, completely dry
INSTRUCTIONS
Strain the cottage cheese well so there’s no excess liquid.
Add the cottage cheese, egg, maple syrup, and vanilla to a blender.
Blend until completely smooth with no visible curds.
Transfer to a mixing bowl.
Add the almond flour, coconut flour, baking powder, and salt.
Mix until a thick, soft dough forms.
Gently fold in the dry blueberries without crushing them.
Divide the dough into exactly 8 equal portions.
Roll each portion gently into a compact ball.
Place all 8 in the air-fryer basket in a single layer with a little space between them.
Air fry at 350°F / 175°C for 9–11 minutes, until lightly golden and cooked through.
Let them rest for 3–4 minutes before breaking one open.
TIP: Make sure the cottage cheese is well strained and the blueberries are completely dry. Too much moisture can make the dough difficult to shape.
TEXTURE TIP: Don’t overcook them. The center should stay soft and moist, but it should never look raw or wet.
STORAGE: Store in an airtight container in the refrigerator for up to 3 days. Rewarm briefly in the air fryer if you want the outside slightly crisp again.
