Before we head into the new year, the DA will be Open Gym style the next two weeks on Monday-Friday! (No Saturday classes) 🗓
Hours are…🕒
7:00 am to 10:00 am
3:00 pm to 6:00 pm
The workout of the day will be on the board and a coach will be on stand by for any questions to be answered. 👨🏻🏫

With the holidays coming up, we asked Chef Fullilove what his favorite holiday recipe is. 📝

Caramel Apple Buttermilk Tart
🥣Tart Shell Recipe: Aka (Pâté Sucrée) Makes 2 Tarts🥣
Ingredients:
* 1 cup (2 sticks) butter (chopped and frozen)
* 2 cups all-purpose flour
* 1/2 Tablespoon salt
* 1/2 cup rye flour (or wheat)
* 1/2 cup sugar
* 2 cold large egg yolks
* 1-2 tablespoons heavy cream
Method:
Blend all ingredients together in food processor.
Press dough into tart pans about ¼ of an inch thick.
Poke holes into dough with a fork and blind bake 15 minutes at 350 Degrees.
🥣Buttermilk Custard🥣
Ingredients:
* 2 cup extra-fine sugar
* 6 tbsp flour
* .5 cup buttermilk
* 4 eggs beaten
* 1/2 cup melted butter
* 1 tbsp vanilla extract
* 1 lemon zest
Method:
Blend all ingredients together in blender and chill until ready to use.
🥣Caramel Apples🥣
Ingredients:
* 2 cups Granulated Sugar
* 4 Large Honey Crisp or Granny Smith Apples
Method:
Core & Peel Apples and Slice into thick wedges. Hold apples in cold water with lemon juice until ready to use.
In a rondo pot cook 2 cups granulated sugar to 340 degrees.
Remove the apples from the lemon water and add the apples to the caramelized sugar.
Cook the apples at medium low heat about 10 – 15 minutes until tender.
Remove apples from caramel with a slotted spoon and let cool.
Note:
Save the caramel sauce and reduce it until it thickens to garnish finished dessert.
To Build Tart:
Lay apples into the tarts in a unified spiral. Once the apples have filled up the tart pour over enough buttermilk filling to cover. Keep in mind the buttermilk custard will rise in the oven so don’t over fill it.
Bake 350 degrees for about 45 minutes or until the top is golden brown.
To Serve:
Let cool slice and serve with coconut sorbet and a drizzle of the caramel sauce you made.
