What makes paella, paella?

It starts with the wide, shallow pan that gives the dish its name. The rice cooks in a thin layer, soaking up flavorful stock while developing one of paella’s most prized features: socarrat, the crisp, toasted rice at the bottom.

Traditionally associated with Valencia, paella can include everything from chicken and rabbit to seafood. Chef Alexis/s paella will feature mussels, shrimp, and chorizo, bringing together rich, smoky, briny flavors with the saffron-seasoned rice at the heart of the dish.

Gazpacho may be one of Spain’s most recognizable dishes, but it did not always look the way it does today.

Its roots are in Andalusia, in southern Spain, where early versions were made with simple ingredients such as bread, garlic, olive oil, vinegar, and water. Tomatoes did not become part of the dish until after they arrived in Europe from the Americas. Over time, they became central to the bright red gazpacho most of us recognize today.

And why is it served cold? In the heat of southern Spain, gazpacho developed as a refreshing, practical meal that could be prepared without standing over a hot stove. The combination of ripe vegetables, olive oil, vinegar, and chilled liquid makes it both cooling and deeply flavorful.
