Need something that the whole family will eat and will keep you on track? Chicken Veggie Quesadillas could be a hit! Quick to make, packed with protein, and secretly full of veggies ๐Ÿคซ.

๐Ÿ— Chicken Veggie Quesadillas

Ingredients:
2 cups cooked shredded chicken (rotisserie works great!)
1 cup shredded cheddar or mozzarella cheese
1 cup finely chopped spinach or bell peppers
1/2 cup corn (optional)
Whole wheat tortillas
1 tbsp olive oil or avocado oil
Salsa or Greek yogurt for dipping

Instructions:
Heat a large skillet over medium heat and lightly coat with olive oil.
In a bowl, mix chicken, cheese, and veggies together.
Place a tortilla in the pan, add a layer of the mixture, and top with another tortilla.
Cook 2โ€“3 minutes per side until golden and crispy.
Slice into wedges and serve with salsa or Greek yogurt for dipping!
