Celiac disease does not have one “look.”

You do not have to be underweight or have severe digestive symptoms to have celiac disease.

Risk factors may include:

• family history
• autoimmune disease
• thyroid disease
• type 1 diabetes
• certain genetic markers
• unexplained nutrient deficiencies or GI symptoms

And yes… adults get diagnosed too.

As a celiac patient myself, mother of a celiac patient, and Doctor of Clinical Nutrition, I see how often people dismiss symptoms because they do not fit the stereotype.

This is exactly why awareness matters.

Creatine isn’t just for bodybuilders. It’s one of the most researched supplements in nutrition science.

Creatine is a naturally occurring compound that helps your body produce rapid energy for short bursts of activity. It does this by increasing the availability of phosphocreatine, which helps regenerate ATP, the primary energy source your muscles use during high-intensity movements like sprinting, lifting, and jumping.

In practice, creatine supplementation has been shown to support several key areas of health and performance:
• Exercise performance by improving strength and power output
• Muscle growth by supporting protein synthesis and muscle cell hydration
• Recovery and training capacity during repeated high-intensity efforts
• Brain function, with emerging research suggesting benefits for cognitive performance and mental clarity

While creatine occurs naturally in foods like beef, pork, and fish, the amounts are relatively small compared to what is used in research studies. For this reason, supplementation is often used when the goal is performance or muscle development.

A common dosing strategy includes a loading phase of about 20 grams per day for 5–7 days, followed by a maintenance dose of 3–5 grams per day. Hydration is important when supplementing, and it’s always wise to discuss new supplements with your healthcare provider.

Reminder to sign up for our first Houston Food Bank volunteer shift next week on June 8th!

This summer, Sky Therapeutics is returning to the Houston Food Bank, and I would truly love to see more of our patients, families, students, friends, and kids join us this year.

Last summer, our team served more than 116 volunteer hours together and received the Bronze Award. This year, our goal is to reach more than 200 hours — not for recognition, but because the need across Houston and surrounding communities continues to grow.

The Houston Food Bank supports nearly one million people across an 18-county area in southeast Texas. Families are trying to make groceries stretch another week. Parents are balancing rent, childcare, and medical bills. Seniors, veterans, and children who deserve reliable access to food and basic human dignity.

As a nutrition professional, this mission means a lot to me because health starts long before someone walks into my office. Before we talk about gut health, hormones, supplements, or prevention, people deserve access to food.

Our volunteer dates are:

• June 8, 2026
• July 6, 2026
• August 3, 2026

If you can’t make next week’s shift, no worries — we would still love to have you join us in July or August.

One of my favorite parts of volunteering last year was watching parents, kids, students, and patients all working side by side packing food boxes together. It was such a good reminder that community still matters and small actions really do add up.

Celiac disease, gluten sensitivity, and wheat allergy are often used interchangeably… but they are not the same.

Celiac disease
→ autoimmune disease
→ gluten triggers immune-mediated intestinal damage

Wheat allergy
→ allergic response
→ may involve hives, swelling, or respiratory symptoms

Non-celiac gluten sensitivity
→ symptoms occur with gluten exposure
→ no confirmed autoimmune intestinal damage

Symptoms can overlap, which is why testing and proper diagnosis matter.

One of the biggest mistakes I see is removing gluten too early before testing is completed, which can make diagnosis more difficult.

If gluten makes you feel bad, that does not automatically mean you have celiac disease.

Celiac disease is not a food allergy or gluten intolerance. It is an autoimmune disease where the immune system attacks the small intestine after exposure to gluten.

That damage may contribute to symptoms such as:

• bloating
• diarrhea or constipation
• fatigue
• iron deficiency
• headaches
• skin concerns
• anxiety
• brain fog
• nutrient deficiencies

And not everyone presents the same way.

As a Doctor of Clinical Nutrition, a celiac patient myself, and a mom of a celiac patient, I know firsthand how confusing diagnosis and gluten-free living can feel.
