Garlic Shrimp over Herbed Quinoa Pasta Roasted Broccolini

2 lbs shrimp
1⁄2 cup butter, cut into pieces
1 teaspoon kosher salt
4 cloves garlic, peeled
1⁄2 cup chopped fresh parsley
1 teaspoon crushed red pepper
Juice of 1 lemon

1 box quinoa pasta
1 bunch broccolini
2 tablespoons olive oil
1 teaspoon kosher salt
1⁄2 teaspoon pepper
Garlic Shrimp over Herbed Quinoa Pasta
Roasted BroccoliniJuice of 1 lemon

Heat oven to 400 degrees. Place shrimp in glass baking dish. In a small bowl, combine butter, salt, garlic, parsley, red pepper and lemon juice. Drop teaspoons of butter mixture on shrimp. Bake for 10 - 12 minutes or until just cooked.

Cook pasta according to package directions. Toss pasta with shrimp and sauce from shrimp. Heat oven to 350 degrees. Place broccolini on baking sheet. Drizzle with olive oil, salt and pepper. Bake at 400 degrees for 10 - 15 minutes.

Also, have bags of steamable veggies on hand. If you plan ahead you will be able to stay on track and lose those stubborn pounds.
