Education has always been Gretchen Bredeimier passion.

In addition to time in the classroom, Gretchen spent six years as a rock climbing instructor, directed a climbing camp program and was a whitewater kayaking instructor/raft guide for five years. She considers her background in education—both indoors and out—to be “my greatest strength as a coach.”

Gretchen now coaches at LoCo CrossFit in Leesburg, Virginia, and coordinates youth and community programs at LoCo as well. She is also currently an interpreter for the Deaf and Hard-of-Hearing.

Fitness goals do not have to be a number on the scale, either. Non-scale victories, such as achieving a new personal record (PR) or getting in your steps for the week, are just as motivating. In fact, these types of goals are often more realistic and can help avoid the scale let down. Remember, your body may be changing even if the scale does not. Muscle weighs more than fat, and your body may lose inches before your weight changes.

Have you tried the egg roll in a bowl recipe by Healthy Steps Nutrition yet?

Egg roll in a bowl is one of their quickest and easiest recipes. Plus it packs a punch of flavor!

To make this dish you only need 3 ingredients and 15 minutes. Add shrimp for extra protein!

Ingredients
• 1 lb 97% lean ground turkey
• 16 oz bag tri-color coleslaw mix (453 grams) green cabbage, red cabbage and carrots
• 1/4 cup coconut aminos (or low sodium tamari or soy sauce)

Instructions
1. Brown ground turkey in large non-stick pan on medium-high heat
2. Once turkey is cooked (about 5-8 minutes) add in shredded coleslaw mix
3. Reduce heat to medium and cook while stirring for another 5 minutes or until cabbage and carrots become tender
4. Add in coconut aminos, stir and cook for an additional 1-2 minutes
5. Remove from heat and divide into 3 portions
6. *Optional: top with chili sauce or toasted sesame seeds (not included in nutrition facts)
