👍 Some of my favorite healthy TJ’s finds!

Who knows me, knows I love shopping at TJ’s. There are so many high quality and affordable healthy foods to choose from.

These are just a few of my favs:

1️⃣ White bean and basil hummus is flavorful and delicious. It’s perfect for snacks paired up with veggies like bell peppers, celery, carrots.

2️⃣ Almond butter - another great snack option with apples and celery sticks.

3️⃣ RX bars. They are not particularly low-carb as I prefer but they have only 5 clean ingredients and perfect for a snack on the go.

4️⃣ Wasabi roasted seaweed - one of my all-time favorites on the days when I crave everything salty and crunchy (girls will understand me 🤫).

5️⃣ Jicama sticks - delicious healthy crunchy snack. They are great with hummus or guacamole.

6️⃣ Precooked beets are so yummy in salads (just add arugula, goat cheese and walnuts).

7️⃣ Coconut aminos - tasty gluten-free and paleo alternative for soy sauce and they’re a little sweet from the coconut!

8️⃣ organic cauliflower rice - a quick easy healthy side dish.

9️⃣ Brown rice and quinoa pasta - great healthy gluten-free pasta option.

Today is World 🌎 pasta 🍝 day! ❤️

So I want to share with you my favorite pasta recipe straight from Italy 🇮🇹

Pasta al ragù’

Pasta: Put a pot of water on the stove, put the corse sea salt in it ( a small fist )
When it boils put the spaghetti ( 80gr x person ) and Don’t brake them!

Wait 9-10 minutes ( depends on the pasta )
Make sure pasta is “al dente” it has to be a little hard inside.

Pour the water out and mix the spaghetti with the sauce immediately or they will stick together.

For the sauce:

Ingredients
* 2 tablespoons olive oil divided
* 1 pound ground beef
* 1 pound fresh ground pork
* 1 ½ cups chopped onion
* 2 teaspoons finely minced garlic
* 1 ½ cups chopped celery
* 1 ½ cups chopped carrots
* salt and freshly ground pepper to taste
* Big glug or two of red or white wine if you have a bottle open 
* 2 28-ounce cans crushed tomatoes preferably in puree

Directions
* In a large saucepot, heat the olive oil over medium-high heat.  Add the veggies and sauté them.
* Then add the ground beef and the pork together and cook, stirring frequently, and breaking up the meat so that it’s very crumbly and browned throughout, about 4 to 6 minutes.  Turn it into a strainer and let it the fat drain off.
* Add the wine, if using, and stir for one more minute, scraping up any bits stuck to the bottom, until the wine pretty much evaporates.
* Add the canned tomatoes and red pepper flakes if using, and stir to combine everything.  Bring to a simmer over medium high heat, stirring occasionally. Add the browned meat, lower the heat to medium low and simmer, stirring occasionally for 20 minutes.  Taste, and season gently with the salt and pepper.

Foodie Fitness Friday: ‘Everything Bagel’ Cauliflower Rolls 😋

Ingredients:

8 rolls

1 medium head cauliflower, riced (4 cups)

⅓ cup almond flour

1 teaspoon garlic powder

½ teaspoon kosher salt

3 large eggs, lightly whisked

3 tablespoons “everything bagel” spice

Directions:

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and spray the paper lightly with nonstick spray.

2. In a large bowl, mix the cauliflower rice with almond flour, garlic powder, and salt. Mix in the whisked eggs to combine.

3. Divide the mixture into 8 even pieces and roll into balls. Transfer the balls to the prepared baking sheet and top each with 1 heaping teaspoon of “everything bagel” spice.

4. Bake until the rolls are golden brown around the edges and dry to the touch, 35 to 40 minutes.

5. Let the rolls cool for 10 minutes on the baking sheet and then carefully transfer to a rack to cool completely.

Nutrition:

167 calories

5g fat

23g carbs

8g protein

4g sugars

As many of you know, Michael's young cousin Roy Atkins III passed on Wednesday morning at 18 in an accidental shooting. He was a wonderful young man, full of life and love. Roy worked two jobs to help and support his family and attended Paradise Valley Community College on a track and field scholarship. He was a fine example of how a young man should be.

We are all devastated by this loss and are reaching out for financial support for funeral expenses and his family's needs in this tragic moment.

Foodie Fitness Friday: Garlic Roasted Sweet Potato & Arugula Salad with Turmeric Honey Mustard Yogurt Dressing 😋🥗

Ingredients:

1 1/2 tablespoons olive oil
2 medium sweet potatoes, cut into 1/2 inch thick wedges
2 garlic cloves, minced
1/2 teaspoon salt
Freshly ground black pepper

For the dressing:

1/4 cup nonfat Greek yogurt
1 teaspoon dijon mustard
1 teaspoon honey
1/4 teaspoon ground turmeric

For the topping:

2-3 cups fresh arugula
1/4 cup dried cherries
1/4 cup toasted sliced almonds

Directions: Preheat 400 degrees F.

Line a large baking sheet with parchment paper. Add sweet potato wedges to the pan and drizzle with olive oil. Add minced garlic, salt, and pepper and toss well to combine.

Bake wedges for 20-30 minutes, flipping halfway through, until tender and golden.

While the potatoes are roasting, you can make the dressing:

In a small bowl, whisk together yogurt, dijon, honey, and turmeric. Thin the sauce out with a few teaspoons of water so that you can drizzle it over the salad. Place in fridge until ready to use.

Once the sweet potato wedges are done baking, remove them from the oven and allow them to cool for 5 minutes. Add fresh arugula on top, along with cherries and almonds, then drizzle with dressing and serve immediately. It serves 2 and makes a beautiful lunch or appetizer. Also great when done cold!

How can we pick a simple and healthy meal 🥘 that the whole family will enjoy?! 🤔

Here are 3 tips:

1️⃣ Stocking your kitchen with staple ingredients and preparing ingredients ahead of time can help ensure that you’re always ready to make healthy, realistic meals, no matter how much time you have on your hands.

2️⃣ Take some time to plan your meals at the beginning of the week; this will save a lot of time in the long run. Choose a few “themed” dinners each week!

3️⃣ Start with what you know.
Turn to the recipes that are already a hit with your family and simply double the batch to save for later in the week or freeze for another time. No need to get overwhelmed picking up a new habit while testing new recipes.
