Vega HQ Top 5 Kale Recipes: #1 Creamed Kale Recipe

1 tsp extra virgin olive oil or coconut oil
2 shallots, minced
1 clove garlic, minced
1 splash white wine
1 bunch green kale, stems removed & chopped into bite sized pieces
¼ cup canned coconut milk
½ tsp nutmeg
Salt and pepper, to taste

1. In a sauté pan, heat coconut oil. Add in shallots and garlic and sauté until translucent.
2. Add in a splash of white wine and kale. Cook kale until slightly wilted.
3. Add in coconut milk, nutmeg and season with salt and pepper. Cook 2 minutes. Taste and adjust seasoning as desired.

Yesterday I found myself annoyed by a fly on a window. I sat staring at the fly for a few moments, until accidentally I shifted my focus behind the fly through the window. In the sky, soft willowy clouds drifted like swans through a sun-drenched blue sky, deflecting the glowing sunbeams as they passed by. Suddenly the fly didn't really matter any more. And then it even flew away. I realized that I often do the same thing in my life. I'll be tired for example, or have a nagging pain, and i'll focus so much of my attention on that nuisance that I will fail to notice the grand beauty happening around me.


Mother's Day Vega Breakfast Ideas: Protein Pumpkin Pancakes

Ingredients List:
1 scoop Vega Sport Performance Protein
1/3 cup wholegrain buckwheat flour
½ cup non-dairy milk
1/3 cup pumpkin puree
2 Tbsp ground flax seeds
4 dates, pitted
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
2 Tbsp coconut oil


In a food processor, add all ingredients and blend together until fully combined.
On medium-high heat, in a pan, melt coconut oil and pour pancake batter to desired pancake size. Cook for 2-4 minutes per side or until bubbles begin to appear. Flip and allow to cook until outside is browned.
Serve immediately and top with you choice of toppings such as: almond butter, fresh berries, sliced banana, shredded coconut, maple syrup, or cashew whip cream.
