Healthy Recipe: Flat Abs Pasta Salad

Here's a pasta salad recipe that you can indulge in while still getting flat abs! The secret is to use a vegetable peeler to turn zucchini into long pasta-like strands. This recipe is filled with fiber and is the perfect side to a lean chicken breast. Servings: 4

Here's what you need:

3 organic zucchini
1/2 cup organic cherry tomatoes, quartered
2 Tablespoons olive oil
1 clove garlic, crushed
juice from 1/2 a lemon
1 teaspoon dried basil
dash of salt and pepper

1. Trim the zucchini ends. Peel down the length of each zucchini until you reach the seeded center, creating long, noodle strands.
2. Place the noodles in a medium bowl, add the quartered cherry tomatoes.
3. In a small bowl combine the oil, garlic, lemon juice, dried basil, salt and pepper. Pour over the noodles and mix to combine.
4. Chill for at least 20 minutes in the fridge.
5. *Optional, garnish with drops of balsamic vinegar glaze before serving.

Nutritional Analysis: 92 calories, 7g fat, 68mg sodium, 7g carbohydrate, 2g fiber, and 2g protein

Health Tip: How to LOVE Exercise

Here’s how to turn something that you’ve dreaded into something you enjoy…

1) Block the Negative: Your thoughts play a big part in determining your favorite things. Block out any negative thoughts you may have about exercise. Focus your energy on creating a positive attitude that will get you excited about hitting the gym, rather than dreading it.

2) Focus on the Benefits: With exercise you have so much to gain and nothing to lose. Exercise makes you stronger, sexier, happier, and gives you more energy. Pick the benefit that moves you the most and fixate on it.

3) Get Guidance: The easiest way to put exercise on your list of favorite things is to experience it at its best. Get onboard with one of my fitness programs and I’ll show you the most effective and enjoyable techniques that will get you into the best shape of your life.

Healthy Recipe: Fitness Lasagna

A great way to reduce the calories in your day is to eat healthier versions of your favorite dinners. This lasagna is the perfect example. The calories, carbs and fats in this dish have been dramatically reduced with some creative ingredient swaps.

Instead of regular lasagna noodles, this recipe calls for zucchini noodles in order to sway the calorie balance in your favor. Cheese has also been swapped out for egg whites, which increases the overall protein while reducing calories.

I am really pleased with how this lasagna turns out both in flavor, consistency, and of course added protein. You’d be surprised at how similar baked egg white looks and feels to melted cheese. Your family will have no clue that this dish is healthy!

What you need
Servings: 6

For the Noodles
1 small spaghetti squash
4 Green Zucchinis, sliced into ⅛ inch noodles
1 teaspoon olive oil
Dash of salt and pepper
a sprinkle of dried basil

For the Filling
1½ pounds ground meat (turkey, beef, chicken or even ground impossible burger)
1 teaspoon sea salt
2 cloves Garlic, minced
1 yellow onion, chopped
2 teaspoons Dried Oregano (OR fresh oregano)
1 (25.5 oz) jar marinara sauce
16 oz. carton egg whites


Instructions

1. Preheat oven to 400 degrees F. Line 3 baking sheets with parchment paper.

2. Cut the ends off the spaghetti squash and discard. Slice the rest of the spaghetti squash into 1-inch rings. Use a spoon to remove the seeds from the center of each ring. Cut the rings into half and arrange on one of the baking sheets. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the preheated oven for 30 minutes.

3. Using a mandoline slicer, slice the zucchini into ⅛ inch lasagna noodles. Place in a single layer on the remaining prepared baking sheets. Drizzle with olive oil, salt and pepper and dried basil. Bake at 400 F for 10 minutes.

4. In a large skillet, place the ground meat, salt, garlic, onion and oregano over medium high heat. When the meat is browned add the marinara sauce and scrape the roasted spaghetti squash flesh into the skillet. Mix well and simmer for 5 minutes.

For the Assembly

1. In a casserole dish, make a single layer of zucchini noodles at the bottom. Top with half of the filling. Top with half of the egg whites. Top with the remaining zucchini noodles, the remaining filling, the remaining egg whites. Sprinkle a little more oregano and basil on the very top.

2. Reduce the oven to 375 and bake uncovered for 40 minutes. Turn on the broil for 2-3 minutes, to help evaporate some of the liquid from the top of the lasagna. Enjoy!

One serving equals: 380 calories, 14g fat, 987mg sodium, 13g carbohydrate, 4g fiber, 6g sugar and 44g protein.

Health Tip: Hidden fat...

If you’ve ever gotten into the habit of frequenting a coffee shop at the same time each morning, then you know that most people drink the same thing every day. There’s the lady with her pumpkin latte with whip, the guy with his black coffee and the college student with her frappuccino. Same order every single day.

What’s your daily drink? If it contains sugar and is high in calories then you’ve just identified your easiest way to reduce body fat. Simply change your drink to something that is zero calorie. A green tea. Plain coffee. Water.

Change your sugar-laden morning drink to a zero calorie drink and try this for 30 days. You will be astounded at how much fat you will have lost with virtually zero effort.

Healthy Recipe: Fig, Goat Cheese and Bacon Appetizer

Here's a great recipe to bring to your next holiday party. Fresh fruit, nitrate-free bacon crumbles and high-quality goat cheese crumbles make a tasty appetizer that is gluten-free and caveman-friendly! Servings: 6

Here's what you need:

6 figs, halved
1 Tablespoon balsamic glaze
6 Tablespoons goat cheese
1 slice nitrate free bacon

1. Preheat oven to 350 degrees F.
2. In a medium skillet cook the bacon until crispy. Allow to cool then crumble.
3. Lightly grease a baking pan with olive oil.
4. Halve the figs and line, cut side up, on the prepared pan.
5. Drizzle balsamic glaze on the cut side of each fig. Sprinkle with goat cheese and bacon crumbles.
6. Place in oven for 5-8 minutes. Serve immediately.

Nutritional Analysis: One serving equals: 98 calories, 3g fat, 68mg sodium, 14g carbohydrate, 2g fiber, and 4g protein

Healthy Recipe: Festive Turkey Burgers

Can’t get enough of those holiday dinner flavors? Then you’ll love these Festive Turkey Burger patties! No need for a bun, just a dollop of cranberry sauce and it’s good to go – protein style. Wrap in a large lettuce leaf if you’d like. Servings: 6

Here’s what you need…

2 tablespoons coconut oil
1/2 yellow onion, chopped
1 celery stalk, chopped
1 small green apple, minced
Sea salt and black pepper
1/3 cup blanched almond flour
1 lb ground turkey
2 teaspoons poultry seasoning
1/4 cup flat-leaf parsley, chopped
2 tablespoons Dijon mustard
1 egg
1 Tablespoon olive oil
Cranberry Sauce

1. Place a large skillet over medium heat. Add the coconut oil, onion, celery and apple. Season with sea salt and black pepper. 2. Sauté for about 5 minutes, until tender. Stir in the almond flour, transfer to a medium bowl.
2. Mix in the turkey, poultry seasoning, parsley, Dijon and egg. Form 6 patties.
3. Wipe out the skillet, add the olive oil and cook the patties over medium-high heat for 12 minutes, or until cooked through. Serve with a dollop of cranberry sauce. Enjoy!

Nutritional Analysis: One serving equals: 345 calories, 26g fat, 571mg sodium, 10g carbohydrate, 2g fiber, and 16g protein.
