I was just making some comfort food over here. Who doesn’t like a warm bowl of creamy pasta?! Had some linguini, cherry tomatoes and parsley from my lil home garden. Yum!

Avocado-Cashew Alfredo

1 cup raw cashews, soaked for 4 hours or overnight and then drained
2 tablespoons nutritional yeast
2 teaspoons chickpea miso paste
1 1/2 cups vegetable broth
1/2 ripe avocado, peeled and pitted
1 tablespoon blended peeled lemon*

Grind drained cashews in a high-speed blender (Vitamix). Add the nutritional yeast, miso, and broth and blend until smooth. Add the avocado and lemon and blend until smooth, adding more broth, 1 tablespoon at a time, if the sauce is too thick.

*Blend an entire peeled lemon. You get more nutritional benefit using the whole fruit. When using just the juice, you lose the fiber and the nutrition that is attached to it.

Now that I'm home all day and night, there's a lot of recipes I'm having fun with. There has to be some outlet for all the anxiety. 😕

Here we have breakfast:

Frozen berries/fruit, oat mylk (homemade with ), pulp from making mylk, chia seeds, h**p seeds, and a 🍌.

Throw it all in your Vitamix or blender and enjoy! 😋 Stay safe and healthy in this turbulent time.
