Limu kohu makes a vast difference in my favorite kine poke. And you can buy it fresh in Hawai'i and freeze it for whenever you need it on the mainland. But, I already ran out for tonite's dindin (following post) as the last time I was in Hawai'i was February 2020.

Background kine talk story:

One of the things I am grateful for and learned directly from my dad was eating raw fish fresh from catching it from the ocean, i.e., preparing it right after the catch.
And while waiting for the catch, scrounging on the reef for pupu, e.g. ’a’ama, ’opihi,, uni, …
My mom realized I really enjoyed raw fish, so she would make it, but I always knew as her raw fish was not the same as dad’s. Reason: A kane has fish hands and instinctively knows how to prepare raw stuff, i.e., it’s in a man’s hand. That is the reason why you only see man chefs at fine sushi bars around the world.

So when my mom finally realized I was not crazy about her raw fish, she suggested whenever there was fresh fish in the fridge that if I wanted any, “you can fix it” and I promptly did using the techniques I learned from watching my dad. Problem solved.
Side note: I always remember when my dad prepped raw fish, his tongue would stick out in the middle or to the side of his mouth as if to sense the taste of the raw stuff. Eventually found out it does make a difference when prepping raw foods. Try doing that …
