This week I’m joined by Wisconsin waterfowler Greg Tait Greg Tait for an Early Goose Season Masterclass.
We get into what September goose hunting looks like in Wisconsin, including scouting, field vs. water setups, decoy spreads, calling, concealment and the tactics Greg uses to put early-season Canadas in the hole.
We also talk about Greg’s start in waterfowl hunting, some of his favorite hunts and crazier moments in the field, his plans for the 2026 season, and his role with Shotty Gear LLC traveling the country with our friend Chase McCulloch on the waterfowl show circuit.

WILD TABLE WEDNESDAY — WEEK 01
Goose season opens this week, so we’re starting with a simple one: bacon-wrapped wild goose breast.
The breast gets a short red-wine marinade with rosemary, thyme, garlic and chili, then a bacon wrap before it hits the grill. Rest it, slice it thin and serve it with your favorite camp sides.
INGREDIENTS
• 1 large wild goose breast
• 1 sprig fresh rosemary
• 4 sprigs fresh thyme
• 2 cloves garlic, minced
• 1 chili pepper, sliced
• 1/2 cup red wine
• 1/4 cup olive oil
• Salt and pepper
• Bacon for wrapping
MARINATE
Trim the breast and pat it dry. Season with salt and pepper. Mix the rosemary, thyme, garlic, chili, wine and oil. Marinate 2–4 hours, flipping halfway.
WRAP + GRILL
Remove the breast from the refrigerator about an hour before cooking. Wrap it with bacon and grill over medium heat. Move it to a cooler side of the grill if the bacon begins to flare. Use a meat thermometer and grill to 130-135 for medium rare.
FINISH
Rest for 5 minutes, then slice thin and serve immediately. Wild goose breast is extremely lean; taking it past medium quickly drives out moisture and tightens the muscle proteins, leaving it dry and tough.

The recipe source recommends medium-rare to medium. USDA guidance recommends 165°F for poultry. Cooking below the USDA recommendation carries increased foodborne-illness risk. Use a food thermometer and make an informed decision based on your own risk tolerance and local guidance.

OPENING DAY EVE.
The decoys are loaded. The blinds are brushed. And every piece of gear has been checked at least twice—then checked one more time for good measure.
Tomorrow morning, another Pennsylvania waterfowl season begins.
It’s more than the first flock breaking over the trees or the first volley echoing across the field. It’s the anticipation, the preparation and the familiar faces gathering in the darkness. It’s strong coffee, heavy straps, muddy boots and the promise of another season’s worth of stories waiting to be written.
