At particular, unplanned times, when the evening light is just right and the fever of the day has cooled, I am filled with wonder at seeing the beauty of an unambititous dinner for my wife and me. Thank you, , for years of enjoyment, and I hope, for many more years to come.

A quick way to make wavy potato 🥔 chips on the Slate: 1. Using a mandolin, prepare the wavy cut potato slices and dump into a cool water container with one mixed teaspoon of baking soda 2. Preheat griddle 3 When ready, dry the chips with paper towels and coat the slices lightly with vegetable oil 4. Using Weber griddle domes, cook the slices evenly, placing a few squirts of water under the dome to create some steam. 5. In a few minutes, flip and repeat the previous step. 6. Reduce heat to low, and flip one more time. The chips are done when they pierce easily with a fork, around 190 degrees F. 7 Remove when ready to serve. The chips should be crispy and not oily. Enjoy!
