If you’re constantly feeling tired, or have erratic energy levels…one of the best things you can do for yourself today is to eat (or, make!) a meal made of whole foods. This one tip has single-handedly transformed my own energy levels and that of so many of my clients over the last decade.
My favorite meal is Pho. But it can take a long time to make at home, and I prefer to make meals myself to ensure I’m using the highest quality ingredients, cooking methods, and made exactly the way I need to feel nourished.
This pho recipe variation uses a pressure cooker, and it takes just 30 min (maybe 45 min, haha). You start with a base of fire roasted onions, ginger, cloves, star anise, and other spices. Then put it all together in a pressure cooker with a whole chicken, which releases the sticky gelatin that thickens the broth in just the right way. Then you add rice noodles, with the garnishes that you like most. I’m using some beef eye round, a bit of cilantro, and sliced jalapeño.
To me, there’s very little more comforting, warming, and nourishing than a hot bowl of pho on a cold winter day.
Whole foods made with an attitude of love and compassion is really all you need. It’s really that simple. Bonus points if you make enough to share the love with others.
