This was NOT the plan and it turned out better than rice.

I was trying to make a rice substitute
👉 Heart of palm
👉 Bamboo shoots
👉 Food processor

And instead,
I accidentally made mock polenta 😳🔥

So I rolled with it.
I air-fried chicken thighs right on top so all that flavor (aka the good fat) dripped down into the polenta.

Low-carb.
High-fiber.
Low-calorie.
Zero diet sadness.

Finished it with a sprinkle of parmesan
Next round? Goat cheese. Period.
