Chorizo frittatas

Great for:
On the go breakfast
Alternative to standard eggs or oatmeal breaky
Mix it up and add a little spice to your life

Ingredients:
-1/2c riced cauliflower
-1/2 c riced broccoli
-1 eggs
-2-3 tbsp almond flour (depending on liquidity. More batter like consistency will flip easier)
-2 tbsp chopped onion
- 2 inches of chorizo from casing
Pinch or two of sea salt
-cooked in avocado oil (evoo and coconut oil also work just fine)
-make as you would pancakes on skillet

Tips:
-they are pretty juicy therefore hard to flip so make small pancakes and flatten them out pretty thin so they can get cooked through the middle and will give you an easier time flipping.

Bulletproof Green Tea Recipe

Why it's great:
-brain power!! Healthy fats give your body efficient high energy fuel
-fat burning ketone energy
-less cravings
-fats stabilize blood sugar/insulin levels therefore leaving you satisfied and less hungry, sustained energy
-so yummy and RICH, you’ll never want plain tea (or coffee!) with the fat ever again! (Or at least I don’t)

Ingredients:
-1 bag of green tea
-1 teaspoon Bulletproof brain octane oil (fat for brain/body fuel)
-1 tsp Om Lion’s Mane (for memory, focus, nerve health)
-1 tsp Kerrygold grassfed butter (or organic ghee works just as well)
-Ripple vanilla plant based half and half (I just started using this and love it! Almond milk is also a great option!)
-optional: stevia or raw organic honey

**I take my Adaptogen (Paradise brand from Mother’s Market or any other health food store) as well as my Garden of Life refrigerated probiotics.

*I have this tea with a fat loaded low carb breaky as well! Lately I’ve been obsessed with Chorizo omelets with ½ an avocado! Fully fat loaded breakfast! But I feel great and have sustained energy, no crash, excellent mental power with clear focus!

Hey party people! Happy Humpday!!

Here is the recipe of the week!!

My hubs and I love our desserts! Believe it or not, he is the better baker in the house! He is the one who first introduced me to this recipe and it has quickly become one of our favorite desserts to make!! Enjoy! And comment below to let me know what you think!! :)

Double Chocolate Paleo Cookies
(chocolate almond flour cookies)

Makes: 2

2 organic pasture raised eggs
1 cup coconut sugar
1 ½ cup almond flour
½ tsp baking soda
8 oz cacao nibs
½ cup unsweetened cocoa
½ tsp sea salt
1 tsp vanilla extract
8 tbsp (112g) kerrygold butter

Directions:
Preheat oven to 350 degrees.
In a large mixing bowl, combine flour, cocoa, baking soda, salt, and sugar.
Add the cubed butter and mix until the batter looks like cornmeal. Add the eggs and vanilla. Continue to blend until smooth. The dough will appear thin like brownie batter more so than dough. Blend in cacao nibs.
Place heaping tablespoon fulls or roll into balls on parchment lined baking sheets.
Bake 8-10 minutes.

Meal prep Monday! Getting the week started off right with stuffed bell peppers! This recipe is light but filling and satisfying!

Ingredients:
•bell pepper with top cut off
fill pepper with:
•grass fed beef
•sautéed zucchini
•diced onion
•minced garlic
•season to liking
•optional: top with some shredded cheese
•bake at 350 for 30 minutes covered with aluminum foil. Take aluminum foil off and cook another 15-20 until browned on top
•top with avocado
•Enjoy!

I’m so thankful to have a job I genuinely LOVE doing. I LOVE making incredible organic delicious food for my clients (and friends, and family😏). I LOVE helping those around me improve their quality of life through nutrition, fitness and wellness workshops. Today I’m feeling really thankful to help be a light and share knowledge to those around me.

Oh, and if you want to know how to make this bomby salad:

•Tuscan kale
•pasture raised organic hard boiled egg
•strawberries
•blueberries
•almond slices
•avocado (not pictured)
•flax seed
•1 tbsp of pomegranate balsamic vinegar and extra virgin olive oil for dressing

Wonderful hike this weekend with and Maverick! Mavericks face: “ok, now I’m going to propel off this rock, momentarily fly and catch that squirrel over there” 🤣🤣 He’s such a crazyass, but that’s why I love him! He’s my spirit animal! Endless energy! We love adventuring!

Made some organic turmeric curry cauliflower salad this morning! Yum freshness!

Ingredients:
•raw cauliflower chopped
•peas
•chopped celery
•chickpeas
•chopped parsley
•olive oil
•turmeric
•curry powder
•salt and pepper to taste
•dukkah seasoning

Mix up and enjoy!! 😊

Ohhh weeeeee!! Daaanggg...Acupuncture and cupping got the job done yesterday! Lots of crap needing to be released- coming back and gimping around from this sprained ankle has been leading to my back seizing up a lot and the proof is in the pudding!
