Ah..such wise words. We spend so much time worrying about all that "could" go wrong...I might fail, I might look stupid, they might say no..Let's STOP the madness.
So many things are going right, and they deserve attention and props. Here's what is going so right...I ate healthy foods today, I drank clean water that hydrated my body, I took another step in the direction of health and wellness. Go me!!

STUFFED PEPPERS
1 lb. ground round or turkey
½ cup chopped green onions
½ tsp. each: garlic powder; pepper
2 small green peppers
1 pkg. cream of tomato supplement
1 cup water
½ cup bean sprouts, optional
Combine meat, 1 tbsp. green onions, garlic powder and pepper. Sauté in skillet. Drain. Cut peppers in half, remove seeds and fill with meat mixture. Place in skillet, mix supplement with water, add remaining green onions and pour over peppers. Cover and simmer for 25 minutes.

CREAMY BROCCOLI CHICKEN CASSEROLE
2 pkgs. cream of chicken supplement, prepared
16 oz. cooked broccoli
8 oz. cubed chicken breast
8 oz. chopped mushrooms
8 oz. chopped green onion
1/4 cup Butter Buds
4 oz. cheddar cheese, grated
Prepare supplements and broccoli. Preheat oven to 400 degrees. Saute mushrooms and green onions in 1 tsp. canola oil with 1 tsp. Butter Buds. Stir in chicken and saute until tender. Add soup and mix well. Add cheese, broccoli and remaining Butter Buds, mixing well. Place in casserole dish and bake for 15-30 minutes. Cut in 4 portions.

TRICK POTATOES
8 oz. frozen cauliflower
1/2 pkg. chicken bouillon supplement, dissolved in 4 oz. water
“I Can’t Believe It’s Not Butter” spray
Cook cauliflower, microwave or steam, until very soft; drain and weigh 4 oz. cooked. Mash with fork or mixer and add supplement. Simmer in stove top to thicken. Add “I Can’t Believe It’s Not Butter,” up to 5 sprays.
