Production update:

Chicken Broc Alfredo is currently in the machine. Chili Mac is packaged and ready to go. About a dozen chorizo egg and cheese left.

I will likely upload inventory sometime tomorrow afternoon and open up the orders, with shipping happening Saturday and Monday. I had to order new boxes as well (y’all rock for buying me out of all my materials!)

I usually produce for 2 months before a drop and that goes very fast. So be warned; this drop is very very small compared to previous drops. If you want them, do not delay once I make it available.

I will try my best to knock out a batch or two every 2 weeks, in between my hunts.

Kitchen Update!

Slightly delayed, but we just packaged up some Chili Mac and cooked a whopping 80 # of chicken broc Alfredo last night.

I will open up inventory for those menus towards the end of the week.

In the meantime, I’m grabbing my bow and hitting the mountains while the machines do the work.

HUNTING SEASON IS OFFICIALLY HERE!!!!

This one is pretty damn cool.

North Slope, Alaska. 2023.

We stopped at Coldfoot Camp on our way north and ran into a couple successful hunters coming out of the field as we were heading in.

Naturally, we ended up at the bar talking hunting.

I kept looking at one of the guys thinking…

“Man, you look familiar.”

He thought the same thing.

Then it clicked.

WE SERVED TOGETHER. 😂

Nick Murphy.

Lisa and I had met Nick back in Alaska around 2017 or 2018. He was an Army nurse, a big hunter, and someone we’d always talked about getting out with.

Life happened. We went separate directions.

And somehow, 5–6 years later, we randomly crossed paths again…

at Coldfoot Camp.

About as fitting a place as you could imagine.

We drank a beer, listened to their hunt story, talked about what we were heading north to do—and before we left, I tossed Nick a few of the freeze-dried meals I’d made for our hunt.

Here’s the part that makes this video so cool today:

There was no Backcountry Bistro.

No business plan.

No brand.

No MBA.

I was less than three weeks removed from the Army.

These were literally just meals I’d cooked and freeze-dried for our own North Slope caribou hunt.

And apparently Nick held onto one. 😂

Fast forward almost three years…

About a month ago, he dug out one of those original 2023 meals, fired it up, and sent me this video.

So to be clear—this isn’t an old video. That’s an old MEAL. 😂

And it still hit.

Man, talk about perspective.

For nearly three years, people have been eating these meals, sharing them, giving me feedback, encouraging me, and supporting this thing—sometimes before I even realized there was a “thing” to support.

And it’s a pretty stark reminder of how quickly life can move.

From making a handful of meals for a caribou hunt…

To building Backcountry Bistro.

Pretty damn cool, Nick. Thanks for hanging onto this one. 🤝

RECIPE SPOTLIGHT: Chicken Broccoli Alfredo 🥦🍗

A few weeks ago, deep in Vail, we were putting some Backcountry Bistro recipes to the test.

Heather has had plenty of my cooking…

But somehow, she’d never actually had a BCB meal.

So I handed her the Chicken Broccoli Alfredo and let the camera roll.

First bite.

Eyebrows go up. 👀😂

I immediately called it:

“The eyebrows say it all!”

Because apparently we’ve discovered a new BCB rating system.

⭐️⭐️⭐️⭐️⭐️? Who cares.

Watch the eyebrows. The eyebrows don’t lie. 😂

No script. No staged reaction. Just a hot meal in the mountains and an honest first taste—all from my POV.

Real food. Real people. Real adventures.

And good timing, because I’m about to knock out another batch of Chicken Broccoli Alfredo for the freeze dryers.

Chicken Broccoli Alfredo AND Chili Mac will both be restocked later this week. 👀

Stay ready. Hunt hard.

A couple weeks ago, we were out checking out some of our new local recreation ground and, naturally, brought a few BCB meals along.

Funny timing, because not long after this, the guys over at Shoot2Hunt tried a lineup of our meals live on the podcast — and Chili Mac ended up being one of the favorites.

I’ll take that.

Especially because Lisa has eaten more than her fair share of field food over the years and knows exactly what a good Chili Mac should taste like. 😂

Meanwhile, the kids were crushing Chicken Broccoli Alfredo by the creek, and I had the Backcountry Burrito Bowl.

A pretty good little field test.

Current status:

Chili Mac — in the freeze dryers right now.
Chicken Broccoli Alfredo — getting knocked out soon.
Backcountry Burrito Bowl — officially SOLD OUT.

Hunting season is here, the field testing continues, and we’re already working on getting more meals back on the shelf.

If you’re new here — welcome to Backcountry Bistro.

I’m Don.

Army veteran. Husband. Dad. Hunter. Fisherman. Outdoorsman. And the guy behind the meals you see on this page.

Backcountry Bistro didn’t start in a boardroom.

It started because I wanted better food in the backcountry.

I was tired of choosing between food that was convenient and food I actually wanted to eat. So I started cooking the same kind of meals I’d make at home, freeze-drying them, throwing them in my pack, and taking them hunting.

Then friends wanted some.

Then friends of friends.

Then people started buying them.

Then they started coming back for more.

Somewhere along the way, that little experiment became Backcountry Bistro.

We make real meals for people who actually spend time outside.

Hunters. Anglers. Hikers. Campers. Guides. Families. People working in remote places. Anyone who believes the meal at the end of a hard day should be something you actually look forward to.

Real ingredients. Big flavor. No race to make the cheapest pouch on the shelf.

I still cook this food.
I still test it in the field.
I still listen to the people eating it.
And I still believe every meal has to earn its place in your pack.

This brand is being built around three things:

Tradition. Community. Stewardship.

Respect where we came from.
Take care of the people around us.
Leave something worthwhile for the next generation.

We’re still small. We’re still growing. And if you’re finding us right now, you’re getting here early.

That means a hell of a lot to me.

So whether you found us through a podcast, a buddy, a hunt camp, a random reel, or because somebody handed you a pouch and said, “You’ve gotta try this…”
