I seriously have the most amazing wife!!!! Stressful day and walked in to dinner ready to go. Rice, chicken thigh and tomato is a fantastic way to end a long day.

Tonight's dinner is 335 calories with 21g protein, 9g fats and 44g carbs.

Tonight is flank steak, avocado and tomato.

For a 4oz serving of steak with 1/2 tomato and 1/2 avocado mixed with .5 tbsp of olive oil and pinch of sea salt for taste. Total calories are, 350 with 26g protein, 23g fats and 11g carbs.

Beautiful way to end the weekend!

Back in the day, mid to late 90's anyway, it would be nothing to stop off and grab a burrito or two at Taco Bell after a workout... it was cheap and easy but not the best choice obviously... I like my adult version of a buffalo ground beef post-workout burrito much more 😀🌯

Breakfast sandwich with egg, deli turkey, prosciutto, and provolone cheese.

Took less than 5 minutes and around 350 calories with 23g protein, 17g fats and 33g carbs. Switch out for low-carb breads or skim cheese if you are looking to save calories and add your favorite hot sauce for a bit more flavor.

Took the pup out for a run this evening, me on the bike and him putting in some road time.

He came in smiling and just flopped to the ground ha!!

A quick video from my ride around White Rock Dallas Sunday.

There are over 10 miles of trails and paved walkways around the reservoir, and plenty of parking. Plus if you're a dog owner, there is a dog park on the north east side they can jump in the water.

If you're looking for an area to walk, jog, cycle, row or spend time outdoors, I recommend checking out White Rock Lake in north east Dallas.

Some days I need something simple to grab on the go, and a homemade smoothie fits the bill perfectly.

Add banana, blueberries, blackberry, raspberry, protein powder, almond milk and 1/2 cup greek yogurt to boost protein and add a sense of creaminess into a blender and blend until smooth.

This makes two servings each 204 calories with 18g protein, 28g carbs, 3g fat and a massive 6g fiber to start the day!!

The misconception is the only way to lose weight is cut carbs, and limit yourself to chicken and salad.

That is ONE method, but who wants chicken and salad every night?

Don't get me wrong, salads are fu***ng delicious and including a healthy dose of vegetables are critical for a balanced diet plan, but you can absolutely include pasta, potatoes, rice and bread in your weight loss program.

Tonight I experimented and made a marinated Chicken Carbonara, kind of an Asian/Italian fusion dish.

I deboned and removed the skin of 4 chicken thighs and marinated in soy, teriyaki and soy sauce seasoned with garlic, red pepper, cracked pepper and marinated in the fridge.

After an hour in the fridge, put in an air fryer at 350 degrees for 12 minutes, turn and finished cooking for another 12 minutes.

While the chicken is in the air fryer, put your pasta in boiling water, I used pene pasta, and cook for about 9-10 minutes. For the cream, mixed two egg yolks and one whole egg with about 1/2 cup of grated Pecorino romano cheese in a bowl.

When the chicken finished cooking, remove from the air fryer and put aside to rest. When the pasta is done, drain the pasta but be sure to save a mug full of pasta water to add to the cream if needed. Put the pasta back in the pan and add the egg / cheese mixture and stir quickly adding pasta water as needed.

Add more pecorino and pasta water until there is a nice cream in the pasta and add pepper. Put the pasta in a bowl and top with sliced chicken thighs, a bit more cheese, fresh basil and enjoy with a glass of chardonnay.

Heading out for a ride this morning, and pre-ride meal consists of eggs, sliced prosciutto. blueberries, chunks of avocado, and a slice of sourdough bread.

Macros are 27g protein, 24g healthy fats, 30g carbs and 4g fiber for 440 calories which is perfect to fuel a morning ride! 🥰👌🚴
