Flourless Monster Cookies 🧟🎃👻🍪

A perfect Halloween treat lightened up just slightly! You can try any nut butter or mix in any toppings you’d like 🍬

🔸1 cup pb
▪️2 tablespoon melted butter
🔸1/2 c brown sugar
▪️2 eggs
🔸1 teaspoon vanilla extract
▪️1 cup oats
🔸1/2 teaspoon baking soda
◼️1/2 teaspoon corn starch (can leave out)
🔸½ teaspoon cinnamon
▪️¼ cup M&M’s
🔸¼ cup chocolate chips
▪️¼ cup chopped walnuts
🔸¼ cup shredded coconut

🔶 In a large bowl mix together the peanut butter, melted butter, brown sugar, eggs, and vanilla extract until smooth

🔸Stir in the oats, baking soda, cornstarch, and cinnamon. Then stir in all of your mix-ins: M&Ms, dark chocolate chips, walnuts and shredded coconut

🔸Scoop rounded balls of dough onto your baking sheet and add a few M&Ms on top of each

🔶Bake for 12-14 minutes and let cool for at least 5 mins before eating

Here come the pumpkin recipes 🎃 these were so perfect with breakfast or as an afternoon snack!

🍂 Healthy pumpkin muffins 🍂
🔸1 3/4 cups whole wheat flour
🔸1 teaspoon baking soda
🔸1 1/2 teaspoons cinnamon
🔸1/2 teaspoon salt
🔸1/2 teaspoon ground ginger
🔸1/4 teaspoon ground nutmeg
🔸1/8 teaspoon ground cloves
🔸1 cup pumpkin
🔸2 eggs
🔸1/2 cup maple syrup
🔸1/3 cup coconut oil melted and cooled to room temperature
🔸1/4 cup almond milk (or any milk)
🔸1 1/2 teaspoons pure vanilla extract
🔸lil bit of sugar for sprinkling

1. Preheat oven to 350 and line a 12-cup muffin pan with paper liners (or grease it)
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, ginger, nutmeg, and cloves. Set aside.
3. In a large bowl, combine the pumpkin, eggs, maple syrup, cooled coconut oil, milk, and vanilla extract. Stir until smooth.
4. Add the dry ingredients to the wet ingredients and stir with a spatula until just combined.
6. Pour the muffin batter evenly into the prepared muffin cups. Sprinkle the muffins with sugar, if using.
8. Bake for 20-24 minutes!

Eat more vegetables.⁣

Sounds basic af but it really is the solution. You’ll feel better, perform better, and naturally close most of your nutrient gaps.⁣

I’m not a fan of obsessing over food groups or macros. For the loveeeee please don’t make boring meals that cut out carbs. Instead, make your favorite meal and just add more veggies to it, this way you’ll actually feel satisfied after you eat.⁣

This is coming from the girl who hated veggies growing up (sorry mom), and now I can’t think of a vegetable I don’t love. Practice makes perfect- slowly add a variety into your diet and start with the basics like spinach, broccoli, zucchini, cauliflower, etc. By adding them into your favorite dishes they take on that flavor and it makes them easier to eat. Your taste buds will adjust!⁣

“I will continue to become only if I resist extinguishing myself a million times a day. If I can sit in the fire of my own feelings, I will keep becoming.”⁣

You are not broken because you feel anger, sadness, fear, anxiety, etc. You feel this way because life is hard, because you are a human. Feeling the full spectrum of human emotions is what makes life so vibrant, it’s what fuels our growth and empathy for one another.⁣

We take values like optimism and gratitude and make them synonymous with bottling up our emotions and pretending they don’t exist. It doesn’t have to be one or the other- you can be sad and grateful. You can have anxiety and still be looking at the glass half full. God didn’t create us to fake it till we make it, God created us to feel. The Bible is full of stores about people with flaws, depression, and suffering.⁣

You can’t just feel the good, you have to feel the bad and the ugly too. Your emotions aren’t something you need to fix, they’re something you need to feel.

Hopping on the biker shorts trend for summer and I’m all about it ☀️ ⁣

After having to take 6 months of minimal exercise, starting to workout more regularly has been a challenge. I went from repping out push ups to needing to take breaks even when modifying on my knees. Workouts I used to breeze through now have me dying. ⁣

A lot of you may be in the same position with gyms being closed. All I can say is be gentle with yourself. There’s a lot going on in the world right now and sometimes your workout isn’t that important. It’s frustrating losing progress but it’s not permanent, nor is it the end of the world ⁣

Your workout should be stress relief. It should be something you enjoy. It should be something that challenges you to build physical and mental strength to overcome. It should be something you do for your health. It should be something that makes you feel empowered. It shouldn’t add extra stress to your life.⁣

It’s humbling to be in a spot I haven’t been in awhile with my stamina and strength, but I wouldn’t change a thing because my body is healthy and finally functioning the way it should be. Here’s to meeting and loving my body where it’s at and using exercise as a celebration of what it can do, rather than using it as a way to change it 🙌🏼⁣

Bright summer vibes from for this month 🤩 ⁣

Did a workout on the deck this morning and it felt amazing. Movement is truly a gift. So often we get lost in burning X calories, working out X days per week, or running X miles. We lose the joy in exercise and it becomes a chore. We don’t feel thankful for our bodies, we’re only focused on changing them.⁣

Having to cut back on my exercise until my body is healed has truly made me appreciate it. Now when I’m working out I’m so thankful I get to get my endorphins flowing. I’m thankful I can feel my heart pumping for me and that I have muscles I get to strengthen. I don’t think about the calories I’m burning, I don’t think about whether or not my body is changing, I’m just grateful to be able to move it. ⁣

Although having to slow down on exercise and put on weight felt like the end of the world at first, I’m learning a lot from it. If you feel like your relationship with exercise has become toxic and only focuses on your appearance, I encourage you to take a step back from it for a bit and work on self love first, because that’s where it all starts.
