What's up friends? It's been a loooong time since I've posted anything I know. I've been busy raising this big boy (who just turned 1 if you can believe it!😳). But I'm back in Reno and thinking of restarting a small wellness/fitness/nutrition coaching business. Who would be interested in working with me again? Also, where would you be interested in fitness training, if that's what you're into? Your home, a park, a specific gym? I appreciate all feedback and suggestions since it's been about 5 years since I've been in the area. Hope to see you all again soon!!

At sometimes our 2 mile walk is super challenging and other days, its a breeze. Its been hard giving myself the grace to rest more and not go as hard as I can in the gym all the time. I'm dreading the 6 weeks of no exercise recovery time, but can't wait to meet this little guy I already love with all my heart. What a crazy new adventure this will be. I feel so blessed to be on it with my best friend by my side.

Plant-Based Breakfast Sandwich
I thought I would share one of my family's favorite breakfast meals. Really we eat these any time of day they are so tasty! I make 4 of them at a time by using the whole bottle of Just Eggs, a vegan egg substitute. These don't taste great by themselves, but on the sandwich, they are to die for! To make these completely vegan/vegetarian, use vegan bacon instead of turkey bacon.
This recipe makes 4 sandwiches so you could feed your whole family with this quick, 15 minute meal, or save the additional sandwiches and have them for lunch or the next day. They are great the next day just like a traditional breakfast sandwich!
Ingredients:
3 pieces turkey bacon (vegan bacon works great as well), sliced into pieces
1 cup Quorn Steak style strips
1 bottle Just Egg replacement
1 tomato, cut into small chunks
4 Sandwich Thins
4 slices of Sargento thin sliced cheese, any variety
1 medium avocado split 4 ways
Lawery's Seasoning Salt and Everything Bagel seasoning
Olive oil spray
1️⃣Put the bacon and steak strips with a little spray olive oil in a skillet to brown.
2️⃣Toast the Sandwich Thins and put one piece of cheese on one side of the toasted bun.
Use a fork to spread out a 1/4 of the avocado between the 4 other sides of the buns so that you have cheese on one side and avocado on the other. Sprinkle the avocado with the Everything Bagel seasoning.
3️⃣Add the tomato to the skillet then pour the Just Egg bottle over all of the ingredients in the skillet. I flavor with a little Lawery's Seasoning Salt.
4️⃣Allow this mixture to cook until its almost cooked through. It should kind of look like a giant egg pancake. Slice it into 4 sections with your spatula. Allow the other side to cook for 2-3 minutes.
5️⃣Section the egg between your 4 sandwiches.
Macros for each sandwich: 325 calories, 19g protein, 13g fat, 35g carbs

Blonde ambition is coming to fruition! One more session to get all the way. I sure missed being a blonde. I know 2020 has been a crazy weird year but it has been great for me and , a year of growth and transformation, love and gratitude. I'm so grateful for this life and feel so blessed to have such a wonderful supportive husband to go through it with.

There's something so invigorating about being outside. Besides that, it feels like the only safe place to be outside of the house. Nature renews the soul and brings gratitude into my heart. Already looking forward to Saturday adventure time!
