Back at it again!! My next run 🏃♀️🏃♀️ is not so long, but still making sure I train to be ready. 💪🏻
60 min of strength training and speed intervals. Let me just say that I’m smiling because it’s DONE. I was ready to stop 5 minutes in. 😂.

I eat vegan 95% of the time. No I’m not technically a vegan. But I have been eating this way for going on 5 years. I truly enjoy eating this way.
I can pretty much go most places and find something to eat. I might have to ask for some accommodations. And here’s the awesome part, I’ve had excellent luck in asking the chef/cook to put something together for me.
This was my breakfast plate from Sterlings Restaurant on Clearwater. If you’re in the TriCities, you know the place. Doesn’t it look beautiful??
It’s hash browns piled high with all the veggies they had in the back. Yay, for Sterlings!! It was so so good! 😋😋

This past Sunday was the Bridge of the Gods Half Marathon. So fun! Amazing views!!
Every time I step out of my comfort zone, I have the opportunity to see things that I never would’ve never seen otherwise.
I plan on being comfortable with being uncomfortable. This is my 10th half marathon. I’ve completed many other runs and way longer distances as well. But there is something about 13.1 miles that is just right before crazy. 😉 😂
I think that every person I know should train and complete a half marathon. It takes commitment and to push past the “no’s” and “I’m not feeling it today” to get it done. You learn a lot about yourself and what you ARE capable of. Plus you become a different person afterwards. You starting believing in YOU!
Stay active. Get up and move. ✌️✌️

Rest day. So I decided to meal prep a bit.
Here is one of my favorite salads at the moment. Well it’s part of a recipe I came across. I made some modifications and it turned into a salad. It’s so good!! Cabbage, cucumbers, red onions, minced garlic, and tomatoes in a sweet and sour dressing. I’m thinking of adding red bell pepper the next time. It’s so light and fresh.
Really enjoy it with some beans and rice. A drizzle of cashew cream sauce 😋😋
The last time, I made a taco, using a corn tortilla, with this salad slaw and topped it with avocado slices. 🤤

🤤Tumeric rice…mmm..crispy chickpeas…mmm…broccoli in the air fryer. Even blended up a cashew cream sauce. Oh man!
