Looking for a healthy high protein lunch idea? Check out this delicious quinoa and black bean bowl! This recipe is designed to be nutritious, flavorful, and high in protein to keep you full and energized throughout the day.

Ingredients:

β€’ 1 cup cooked quinoa
β€’ 1 can black beans, drained and rinsed
β€’ 1 cup corn kernels (fresh or frozen)
β€’ 1 cup diced tomatoes
β€’ 1 avocado, diced
β€’ 1/4 cup chopped cilantro
β€’ Juice of 1 lime
β€’ Salt and pepper to taste

Instructions:

1. In a large bowl, mix cooked quinoa, black beans, corn, and diced tomatoes.
2. Add diced avocado and chopped cilantro.
3. Squeeze lime juice over the mixture and season with salt and pepper.
4. Toss gently to combine and serve.
