Let’s talk meal prep!
I have learned that I MUST meal prep or I will either not eat, or eat everything in my pantry with no nutritional value.
What works for me, may not work for you but I hope you can use my thought process as an example, a guide to help you identify where you struggle and find a way to outwork your laziness or executive dysfunction.
I know I will not eat breakfast if it is not easy. This week I made some Oats Overnight shakes with Oikos Greek Yogurt protein shakes (they taste amazing, have fiber and probiotics, it didn’t take much to sell me!) as well as pancake bites. When planning my breakfasts I look to see if I will be on to go, or have access to a microwave. I like to be able to grab a shake and go on busy days, yet enjoy a quiet simple breakfast when I can.
For lunches, I pick foods I love and will look forward to. I know chicken and broccoli is gross and easy to skip, so I plan meals I enjoy. Like burger bowls loaded with potatoes and ground beef and a side of fresh veggies with some homemade Ranch. Or a healthier version of baked beans with tons of fiber and protein with an added secret veggie! (I add cooked riced cauliflower to the pot and let it cook till it’s mush, you can’t even taste it! I use this trick all the time in any recipe I can!) Yes, these do have a bit of sugar in them, but the amount of fiber and protein, plus the flavor? Worth it!
Snacks? I could eat a whole bowl of fruit if it was out in front of me. Instead, I add a couple of different fruits and some Greek yogurt for protein. Blueberries are one of the most complex nutritionally dense foods there are, I try to add them all the time!
My advice to you is, don’t worry about adding a couple of “guilty indulgence” ingredients. If a little honey and sweetness helps you eat 10g of fiber in one sitting, that’s an awesome accomplishment and shouldn’t be discounted because of “the sugar”. Unless you have a blood sugar regulation issue and know which fruits or foods affect your blood sugar, I encourage you to eat the fruit you enjoy!
No, I am not saying you should add sugar to every meal you eat. What I am encouraging, is finding food you like. Finding foods you can repeat over and over again that are nutritionally dense and balanced.
