Try this Lemon-Dill Salmon Power Bowl for a simple, high-protein and fiber-packed meal. 💪
Ingredients:
4 oz cooked salmon
1/2 cup cooked edamame
2 cups raw spinach
1 cup cherry tomatoes, halved
1/3 avocado (about 50 g), diced
1 to 2 tbsp lemon juice
Dill, garlic powder, black pepper
Small pinch of salt
Instructions:
Season the salmon with dill, garlic powder, pepper, and a squeeze of lemon.
Cook it by baking, air frying, or pan searing with minimal added oil.
Warm the edamame.
Add spinach to a bowl, then top with tomatoes, avocado, edamame, and salmon.
Finish with the remaining lemon juice and a little extra black pepper.
Estimated nutrition for the full bowl: About 465 calories, 38.4 g protein, 10.5 g fiber, and 27.6 g fat.
