Chilled melon soup | roasted Monchong ribs | uni | beluga lentils | red chili’s | ogo seaweed |
A dish I called “sea and melon” the flavors were actually great, you have a sweet and cold melon broth, texture and earthiness from the lentils, a little salt from the uni and and seaweed, spice from the chili’s and the fish is roasted and offers a great counter balance of hot fish and cold soup. Another cool thing is that when the ribs of the fish are hard roasted, they’re completely edible and have the texture of whole sunflower seeds. -
