Our Nutrition Seminar is on Saturday! Preview one of our favorite (and good for you) recipes below:
2 boneless, skinless chicken breasts
2 medium zucchinis, spiralized into noodles
2 tbsp extra virgin olive oil
4 garlic cloves, minced
1 tsp dried oregano
½ tsp dried thyme
½ tsp dried basil
1 lemon, juiced and zested
½ cup low-sodium chicken broth
½ cup unsweetened almond milk (or milk of choice)
2 tbsp plain Greek yogurt, unsweetened
Sea salt and black pepper, to taste
Fresh chopped parsley, to garnish

Step #1: Season the chicken with fresh herbs, salt, and pepper.
Step #2: Heat 1 tablespoon of olive oil in a large skillet. Add chicken and cook for 6-8 minutes on each side until fully cooked. Remove from heat and set aside.
Step #3: Add more oil and garlic and saute for 1 minute. Then, add chicken broth and lemon juice.
Step #4: Reduce heat to a simmer, then stir in almond milk and Greek yogurt to create a creamy sauce. Add chicken back to the pan along with zucchini noodles. Cook until soft and slightly tender. Serve with fresh parsley or shredded cheese.
