No bake protein packed peanut butter energy bites that taste like peanut butter cookie dough with amazing chewy texture. These healthy peanut butter energy bites are loaded with nutritious ingredients like flaxseed, protein and honey for the perfect no bake snack💚


Keep these energy bites in an airtight container for up to 1 week, or in the freezer for up to 2 months. If you’re eating them straight from the freezer I’d recommend letting them soften up a bit in the fridge or at room temp before doing so.


1/2 cup natural peanut butter (or almond butter)
1/4 cup honey (or date syrup or coconut syrup)
1 scoop protein powder of choice*
2 T flaxseed
1/2 teaspoon cinnamon
1 handful dark chocolate chunks

Deep breathing delivers negative ions throughout your body to revitalize your energy. You can also practice breathing and stretching at the end of your day to help relax your mind and body to prepare for sleep.

Maintaining a regular stretching program can keep muscles limber. Stretching allows blood flow to circulate through tight muscles, surrounding tendons and ligaments while removing toxins and lactic acid from the body. Stretching restores muscle flexibility and reduces inflammation from overuse. Another added benefit of stretching is that it activates the lymphatic system, giving your immune system a boost.

The great thing about a regular maintenance program of stretching is that it does not require any special place or cost. There are many areas of your home or office that you can explore that give you the support and resistance needed for stretching. Developing a regular routine can restore tired muscles, tendons and ligaments and will more than likely give you an overall sense of well-being.

Goat Cheese & Pesto Avo Toast with Poached Eggs. *I add parsley & pepper and serve on sourdough.

Poached Egg Tips

1. Don’t be afraid. It’s easier than you might think.

2. Place about 2 inches of water into a pan and bring to a boil. Once it’s vigorously boiling, turn down heat just slightly before adding in your eggs.

3. Crack egg into a bowl before you pour it in the water so you can gently ease it in. I add a splash of vinegar, take my spatula and circle it to create a swirl. I gently add the egg from the bowl into the swirl.

4. Keep your eye on the eggs. I never time, just watch. Once the whites look set, and the yolk looks all runny and jiggly in there, I remove the egg with a slotted spoon. Sometimes they’re pretty and picture perfect, oftentimes they’re not, but they almost always taste delicious💚

They’re in season ❤️😍

Strawberries help your body heal cuts and wounds and lower your risk of infection because they contain Vitamin C.

Strawberries help you feel full and keep normal blood sugar levels because they contain fiber.

Strawberry Spring Rolls

INGREDIENTS
For Rolls
4 cups of water
6 rice paper wrappers
10 strawberries hulled and sliced
3 cups of leafy greens
½ cup shredded carrots
½ cup red cabbage

For Dipping Sauce
2 Tbsp fresh lime juice
1 Tbsp soy sauce
2 Tbsp rice vinegar
2 tsp sesame oil
1 Tbsp fresh grated ginger
1 Tbsp diced strawberries
1 tsp minced cilantro

DIRECTIONS
Rolls

1. Boil water and keep warm.

2. To soften rice paper, fill a bowl with boiling water. Using tongs, soak one rice paper at a time for 3 seconds, and quickly fill and roll, one rice paper at a time. Do not over-soak rice paper.

3. Working at the center, place approximately 6 slices of strawberries, ½ cup leafy greens, a small amount of shredded carrots, and cabbage onto the rice paper.

4. Fold in the sides of the roll and bring the bottom up and over the filling; tuck tightly while rolling.

5. Place on a plate seam-side down and continue rolling remaining sheets.

6. Serve chilled or at room temperature with dipping sauce.

Dipping Sauce

Whisk together all ingredients and dip rolls in sauce.

Variations

If you do not have rice vinegar, try another type of vinegar or lemon or lime juice instead.

No sesame oil? Try using vegetable oil such as olive oil, avocado oil or canola oil.

MATCHA💚with a high concentration of antioxidants present in matcha, drinking it often may help prevent cell damage and potentially lower risk of chronic disease. A compound called L-theanine found in matcha actually alters the effect of the caffeine in the tea, which is why you may feel more alert and avoid that mid-afternoon crash like you might get from coffee.
