Back on that routine and going with one of my favorites. Simple, affordable, and quick to whip up a weeks worth of lunches:
2-3 lbs lean ground turkey
2 bags of frozen veggies
Taco seasoning, preferably low sodium
I cook the frozen veggies in a skillet, then dump them in a bowl. Then using the same skillet, I cook the ground turkey until it's longer pink, toss in some water and taco seasoning (to taste preference) and let it simmer for about 5 minutes.
Then I dump the veggies back in with and mix it all together and let it simmer for another 5-10 minutes with a lid on it (otherwise the turkey can dry out).
After that I section it out into containers, let them cool a bit, and them pop them in the fridge. Depending on your microwave, it usually takes about 2-3 minutes to heat it all up.
