🍅 INGREDIENTS
2 x 7.05 oz snapper fillet, raw
0.5 Teaspoon cumin
1.0 Teaspoon sweet paprika
1.0 Teaspoon dried parsley
1.35 fl. oz lemon juice, freshly squeezed (Snapper)
1.0 garlic clove (crushed (Snapper))
16.0 ounce sweet potato (raw, skin removed, chopped)
0.4 ounce butter (2 tsp.)
1.4 fl. oz cows milk (reduced fat)
1.0 Pinch of himalayan salt & pepper (Creamy Sweet Potato Mash)
11.0 ounce green beans (raw, ends trimmed, chopped)
0.67 fl. oz lemon juice, freshly squeezed (Green Beans)
1.0 Pinch of himalayan salt & pepper (Green Beans)
1.0 garlic clove (crushed (Green Beans))
💪 INSTRUCTIONS - 20 Min - Makes 2 servings
1. Begin first by marinating the snapper with lemon, garlic, cumin, paprika, and parsley in a bowl. Set aside in the fridge for half an hour.
2. In the meantime, bring water to boil in 2 saucepans, add the sweet potato to one saucepan, and add the green beans to a steaming basket over the second saucepan. Cook the sweet potato for 15 minutes or until it becomes soft. Cook the green beans for 5 minutes or until softened. Transfer the green beans to a bowl.
3. Drain the water from the sweet potato and transfer it back into the saucepan. Mix in the milk, butter, salt, and pepper. Using a hand blender, blend the sweet potato with the liquid ingredients until it becomes a creamy texture. Set aside.
4. To season the green beans, mix the beans with lemon juice, crushed garlic, and salt. Set aside.
5. Heat a BBQ grill over medium temperature, and cook the snapper for a few minutes on each side or until cooked to your liking.
6. Serve 1 snapper beside half of the portion of the sweet potato mash and green beans. Refrigerate the leftover snapper, sweet potato mash, and green beans for tomorrow's serving.
