Smitty's Mid-West Boxing Gym is a inner-city gym started by Coach Smitty a former boxer himself who has been in boxing since 1974, been on the All Army boxing Team, former Kansas City open Division Golden Gloves Champion, north Carolina State Golden Gloves Champion and has won over 30 Golden Gloves Championships around missouri, Oklahoma, Kansas, and Arkansas. He trains boxing the old school way he goes back to the basics and really cares about each and everyone of his boxers whether they are training for competition or just to get into great shape! He also teaches speech class, and has a computer lab in the back of his gym for kids to complete homework after school before and after working out. He has volunteer tutoring for those who need it so they can maintain the C+ average that he demands of his students that are still in school. His goal is to keep kids off the streets and to help them to become productive citizens of society. Always Ready To Rumble XIII is almost finally here!!!! On site will be the 1st man to stop Mike Tyson in the ring James Buster Douglas, and any true legend in the boxing world the one and only Larry Holmes, also a beast in the ring former Heavyweight Champion Lamon Brewster, then the one we all love in Springfield, Missouri Merciless Ray Mercer and our own Mid-West Boxing 5X world champion! The one and only Corey Spinks right out of St Louis!!! All in the Springfield Expo Center right here in Springfield to cheer on our young upcoming young champions!!!!

🐇 Smothered Rabbit & Gravy — An Old Cajun Favorite

There’s something about those early morning rabbit hunts after the first hard freeze that brings back memories. The air was cold and crisp, the woods were quiet, and you’d head out before the sun was fully up, hoping to come home with enough rabbit for supper.

Back then, hunting wasn’t just about the sport. It was about putting food on the table. And when you came home with a few rabbits, you knew there was a good meal waiting to be made.

We’d clean them up, season them well, brown them in a hot skillet, then let them slowly smother down with onions and mushrooms in a rich, savory gravy until the meat was tender. Spoon that gravy over a pile of hot rice, and you had a Sunday dinner that could feed hungry tummies and make the whole house smell amazing. ❤️

This is the kind of old-fashioned Cajun cooking that brings back memories.
