Hello everyone! Here's this week's menu:
Mediterranean Rice bowl- organic spiced brown rice topped with organic lemon dill tofu, organic wilted spinach, organic chickpeas, marinated artichokes, black olives, organic oven roasted beets and organic tomatoes
Eggless salad sandwich on a GF ciabatta roll with organic fresh tomato and organic mixed greens served with chips and carrot and raisin salad
Thai coconut curry Ramen noodles bowl with mixed veggies, organic chickpeas, organic wilted kale and topped with organic GF Ramen noodles, fresh organic lime and organic cilantro
Lentil shepherd's pie- organic root and mixed veggies, organic green lentils and organic potatoes in a vegetable gravy topped with organic potato and cauliflower mash served with an organic arugula and apple salad

Hello! Due to overwhelming request, I've decided to do vegan meal prep! Every monday I'll post my 5 meals for the week and you'll have till Thursday to order! Pick up in St. Clair Shores on Sunday. Order 1 or order 10!!!
I use high end quality ingredients, almost all organic. Minimal salt and oil/fat used. Mostly gluten free as well but can modify rolls and breads upon request.
Next week's menu is:
$12/ meal
Mexican enchilada casserole- layers of gluten free soft tortillas, black beans, sweet corn, fiesta rice, refried beans, enchilada sauce and vegan cheese baked to perfection and served with sides of sour cream, crispy chips and guacamole
Tunaless salad sandwich on a GF sprouted seed roll with power greens served with minestrone with lentil soup and fresh fruit
Soyrizo and tofu scramble over oven roasted red skin potatoes and topped with sauteed mushrooms
Very veggie lentil bake- mix of red lentils, brown rice loaded with zucchini, carrots, broccoli, peas, corn, cauliflower and baby spinach and topped with vegan pepper jack cheese. Served with a side salad with pecans, dried cranberries, blueberries, tomatoes and apple cider vinegarette
Oven roasted veggie sandwich with power greens pesto on a gf roll with baby arugula and served with fresh fruit bowl and Italian vegetable soup
Add GF/vegan chocolate chip oatmeal raisin cookie bars

Harvested some beets, radishes and greens today and made a masterpiece! 8 points with 2 pita 10! Hummus 2 tablespoons 1 point. Make it to your tastes
Oven roasted beets
washed, loosely wrapped in foil in the oven on 400 for 20-45 minutes depending on size. Once cool enough to handle use a paper towel to gently rub off the outer skin. Slice.
Greens salad- chopped kale, radish greens, romaine, mint and parsley
Sliced cherry tomatoes, radishes, cucumber
Tula fattoush dressing 3 points for 2 tablespoons
Almond quinoa
Toast almond slivers and to cooked quinoa 5 points 1/2 cup
Salt and pepper
Mix up all the veggie/ herb goodies and toss in dressing, top with 1/2cup almond quinoa

Vegan French toast weight watchers style! So delicious!
Serves 2 for 5 points
2 tablespoons chickpea flour. I made my own in my vitamix dry bin but it's at most grocery stores.
1 cup unsweetened vanilla almond milk
1tablespoon cinnamon
1 teaspoon pumpkin pie spice
Mix it all together in a shallow dish and dunk 8 pieces of aunt millie light bread on both sides
Fry on a greased griddle about 3 minutes each side
I served mine with banana slices, fresh berries and cinnamon apples

Vegan minestrone soup. It was rainy and cool yesterday so I took advantage and made some warm hearty soup! 12 servings for 2 points each!
Saute your mirepoix(carrots, onions, celery) in a large pot
Add garlic.
Add veggies. As usual with soup I use frozen but you need to spring for the organic/ premium brands to get nice whole veggies.
Add 2 cans diced tomatoes, 1 can each red kidney beans and white beans, 2 cups pasta, 2 teaspoons of dried basil, 1 teaspoon oregano, 1 teaspoon thyme and 8 cups of veggie broth
Bring to a boil and simmer until pasta is cooked.
Serve with crusty bread or pitas and my greens and artichoke pesto for dipping
