(Recipe of the Week) High-Protein, High-Fiber, Customizable and quick to throw together, this cauliflower rice bowl will be a new staple in your weekly rotation!
Healthy Chicken Cauliflower Rice Bowls

Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
4 cups cauliflower rice
1 red bell pepper, diced
1 zucchini, diced
1 cup broccoli florets
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
Salt and black pepper to taste
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
How to Make It
Season the Chicken
Place the chicken pieces in a bowl and season with smoked paprika, Italian seasoning, onion powder, garlic powder, salt, and black pepper. Toss until every piece is evenly coated.
Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes until golden brown and fully cooked. Transfer the chicken to a plate.
Sauté the Vegetables
In the same skillet, add the remaining olive oil along with the garlic. Cook for about 30 seconds until fragrant. Add the bell pepper, zucchini, and broccoli, then sauté for 5–6 minutes until the vegetables are tender-crisp.
Cook the Cauliflower Rice
Add the cauliflower rice to the skillet and stir everything together. Cook for 4–5 minutes, stirring occasionally, until the cauliflower rice is tender but not mushy.
Combine Everything
Return the cooked chicken to the skillet and drizzle with lemon juice. Toss everything together until well combined and heated through.
Garnish and Serve

(Recipe of the Week) A delicious and vibrant dish featuring spicy jerk chicken served over a refreshing mango slaw, topped with a creamy honey lime dressing.
Jerk Chicken & Mango Slaw Bowls with Honey Lime Cream

Ingredients
4 chicken thighs, boneless and skinless
2 tablespoons jerk seasoning
1 tablespoon olive oil
1 mango, diced
2 cups cabbage, shredded
1 red bell pepper, sliced
1/4 cup cilantro, chopped
1/4 cup mayonnaise
2 tablespoons honey
1 lime, juiced
Salt and pepper to taste
Instructions
Preheat the grill to medium-high heat.
Rub the chicken thighs with jerk seasoning and olive oil.
Grill the chicken for 6-7 minutes on each side or until fully cooked.
In a large bowl, combine the mango, cabbage, red bell pepper, and cilantro.
In a separate bowl, whisk together the mayonnaise, honey, lime juice, salt, and pepper.
Pour the dressing over the slaw and toss to combine.
Once the chicken is cooked, slice it and serve it over the mango slaw.
Drizzle with additional honey lime cream if desired.

Grilled Garlic Butter Steak and Zucchini Skewers

Ingredients
1 lb steak (sirloin or ribeye)
2 medium zucchini
4 cloves garlic (minced)
4 tbsp butter
2 tbsp olive oil
Salt to taste
Pepper to taste
Skewers (wooden or metal)
Instructions
Preheat your grill to medium-high heat.
Prepare your ingredients by cutting the steak into 1-inch cubes and slicing the zucchini into thick rounds.
Make the garlic butter mixture by melting butter and mixing it with minced garlic, olive oil, salt, and pepper.
Thread the skewers by alternating pieces of steak and zucchini.
Brush the skewers generously with the garlic butter mixture.
Grill the skewers for about 10-12 minutes, turning occasionally, until the steak is cooked to your liking and the zucchini is tender.
Serve warm and drizzle any remaining garlic butter over the top.
