A loin chop is a cut of meat taken from the lumbar region, or lower back, of an animal. The term most commonly refers to pork or lamb, but a beef T-bone steak is also technically a loin chop. Loin chops typically contain a T-shaped bone with tenderloin on one side and loin meat on the other. 
Common types of loin chops
Pork loin chops: Often called “porterhouse” or “T-bone” pork chops, they contain both the loin and tenderloin muscles. Pork loin chops are relatively lean and have a mild flavor.
Lamb loin chops: Sometimes called “the porterhouse of lamb,” these are one of the most tender lamb cuts. The meat has a savory, slightly gamey flavor.
Beef loin chops: Though the term isn’t typically used for beef, a T-bone steak is a type of beef loin chop. 
General cooking instructions
Loin chops are tender and cook quickly, making them ideal for high-heat methods. The goal is to cook the meat until tender without overdoing it, which can cause the lean meat to dry out. 
Preparation: Bring the chops to room temperature for even cooking. Pat them dry with paper towels and season them with salt, pepper, and other herbs or spices.
Searing: Heat oil in a heavy-bottomed or cast-iron skillet over medium-high heat. Sear the chops for 2 to 4 minutes per side, until golden brown.
Finishing: Finish cooking in the oven or on indirect heat on the grill until the desired internal temperature is reached. 12/21/2025
