Rennet is the enzyme that turns milk into cheese. Without it, milk doesn’t coagulate and cheese can’t form. Traditionally, rennet came from calf stomachs and was used that way for centuries. I still use veal calf rennet in my cheesemaking. 

Today, most cheese made in the U.S. uses FPC (fermentation-produced chymosin) instead.

FPC is made with CRISPR tech by inserting the gene that produces chymosin into microorganisms (like yeast or fungi). 

Those microbes are then fermented, and the enzyme is purified and used to make cheese. This method was originally commercialized in the 1990s by Pfizer, and similar biotechnology is now widely used across the cheese industry.

Industry estimates suggest around 80–90% of U.S. cheese is made using FPC rather than traditional animal rennet. 

On ingredient labels, FPC is typically listed as “enzymes,” “microbial enzymes,” or “vegetarian rennet.” Because of how it’s regulated, it does not require a GMO label, so consumers usually have no way to tell how the enzyme was produced.

Cheese brands that have publicly stated they avoid GMO rennet or whose products are organic (which does not allow genetically engineered enzymes):

• Amy’s
• Raw Farm 
• Organic Valley (USDA organic cheese cannot use GMO-derived enzymes)

Many mainstream cheese brands use fermentation rennet but do not publicly disclose whether it is GMO-derived or non-GMO.

This was something I didn’t learn until I started making cheese myself. Do you care how your food is made, or do you feel like ingredient transparency should be optional?
