Baking tests are supposed to be standardized, but they fundamentally can’t be. Why? Two reasons.
First, test bakers are skilled craftspeople, not robots. They know their craft well so they can instinctively adjust as needed.
Second, baking tests are the only sensory evaluation where the person making the product is also the person judging it, introducing bias.
