Twenty-five years ago, 343 of New York’s Bravest climbed into the World Trade Center towers on September 11, 2001.

They climbed toward danger while thousands of others were trying to escape it.

Today, five members of the Yates Center Fire Department honored those fallen brothers by participating in the Wichita 9/11 Memorial Stair Climb.

Each of our firefighters climbed the equivalent of 110 floors in full firefighting gear, carrying with them the name of an FDNY firefighter who gave his life that day. Some of our members carried two.

That is 110 floors climbed not for a trophy, a finishing time, or recognition, but simply to remember.

If you see one of these dedicated members around Yates Center, give them a pat on the back and thank them for representing our department and our community in this important tradition.

More importantly, thank them for helping ensure that John Giordano, Keith Glascoe, Dennis Scauso, Thomas Gardner, Bruce Gary, John Ginley, John Schardt, and all 343 firefighters who climbed those stairs 25 years ago and never came back down will never be forgotten.

It’s Sunday buffet again and we have catfish and tater wedges new today!

We are considering adding a 2nd buffet table to Sunday buffet to be able to offer more. If we do this we are considering opening Monday evenings for buffet only, also. We are currently closed on Mondays.

We bought 3 extra cases of catfish this week so Sunday buffet we will have fried catfish filets along with our fried chicken. Don’t miss it! We will also have our fried tater wedges instead cheesy potatoes.

Some of our plates from yesterday. People tell me all the time to post more food pics and I always forget to take them but Karma got these for me.

Sidenote – We almost took the chicken quinoa off the menu when we first opened because it wasn’t a big seller but now people have learned it is really good and we sell quite a bit of it. Glad we let it stick around. We also sell almost as many sweet potato fries as we do regular fries. And a lot of our guests do not know that they can get brown or white gravy on anything. Some like their chicken fried steak with brown gravy as you can see in the picture. 

And let’s talk culinary for a minute. We used to wrap our baked potatoes in tinfoil. I wasn’t happy with how they were coming out and got to doing a lot of research. Turns out baking potatoes in tinfoil is becoming a thing of the past because it actually traps moisture and causes them to become soggy. We now roast them without wrapping them in tinfoil and I’m much happier with the taste, texture, and results. (Now don’t come at me if you wrap yours in tinfoil and like the results. 😬) You can get yours with just butter and sour cream or loaded with cheese and bacon, as well. You can even add jalapeños if you like it spicy. 😬

Several weeks ago I posted about Nick. I had planned on posting a staff person a week….but my adhd brain went another direction.

So today meet Jess. We were days away from opening when she and her mom - my good friend Teri - stopped by the restaurant to see if I needed any help. Oh boy has that been one of the biggest blessings since we opened! Teri helped us make it through a really rough opening and Jess stuck around after that chaos and is still here. She is a top notch server and our guests love her! I often get asked which section she has when people see her working. She’s on it. She’s friendly and personable. She also bartends for us and she makes up some fun favorites. Her most recent one -
what we affectionately call the “surprise me” - has a fan base.

Thank you Jess for joining us! God knew we needed you! When I say that we could not have made it these last six months without you, I truly mean it!

To say we are all SUPER excited about our new addition is an understatement! We have desperately needed this storage space. We were then able to also add a dishwasher, a salad bar prep table, THREE new 8 foot long stainless steel tables, an extra long plate warmer, tons of food storage shelving, a fridge for just salad bar items, another freezer, lockers for staff, and more!

We also updated our Toast Point of Sale system to have an additional Kitchen Display Monitor and a second prep ticket printer. Our goal is to be as efficient as we can be and to serve hot, fresh, food as quickly as we can no matter if every table is full or not. And do it with a smile on our face and joy in our hearts. ❤️ We’ve learned a lot in almost six months - and the biggest lesson is there is never enough space in the kitchen but this helps tremendously!

We are so thankful for our guests and our amazing staff!
