Hosting retreats has been a dream of mine for so long ♥️ To be able to share my love of movement, health, self understanding + exploration, wellness and connection is what makes me get up in the morning - that and coffee! ☕️

GRANOLA | Vegan • RSF

WHY WHY WHY is it so hard to find granola that isn't filled with 3+ different kinds of sugar? Syrup, honey, maple, fructose, grain sugar, etc
Yes maybe some of these are not bad for you - but WHY do we need ALL of them? My trick? Make your own.
1 hour oven . 10 mins Prep time . Mix + match ingredients to your own liking. Couldn't get better.
You will need 👇🏼
𝔹𝔸𝕊𝔼
🔅Oats
🔅Desiccated Coconut
🔅Coconut Flakes
🔅Puffed Rice
🔅Mixed Raw Nuts
𝔸𝔻𝔻 𝕀ℕ
🔅Maple (vegan) / Honey (not vegan)
🔅Coconut Oil
🔅Vanilla Essence (this batch i actually did almond essence and was 👌🏼)
🔅Cinnamon
𝕆ℙ𝕋𝕀𝕆ℕ𝔸𝕃 𝔼𝕏𝕋ℝ𝔸𝕊
🔅Cocoa Powder
🔅Protein Powder
🔅Powdered Coconut Milk
🔅Preheat oven to 150 degrees F.
🔅Melt the coconut oil, maple, vanilla essence & cinnamon
🔅Mix into the BASE ingredients in a big bowl. (Including any other optional extras you added)
🔅Spread out evenly on an oven tray and bake until toasted (+- 1 hour)*
🔅*Stirring around every 20 mins so doesn’t burn
🔅Et Voila
👉🏼SIDE NOTE : If you want to add anything such as dried fruit or chia seeds, it's best to add this at the end once its done in the oven. To avoid burning it.
Bear in mind this is what I use but feel free to take out any of the ingredients. Make it + . The beauty of this is YOU can choose what goes in.

Who would have thought you would need to put the word 'healthy' in front of bran muffins 🤷🏻♀️But sadly most muffins in store or even recipes online require sugar, butter, unhealthy oils, etc...
So here we go. HEALTHY Bran Muffins that are:

Found this recipe on (holy grail of recipes) by but I made a little personally touch by added 1/2 cup raisins + 2 grated carrots purely cause I had some left over from previous baking sessions and well, and all.
🌱To make this recipe Vegan as I did - just swop out the 2 eggs for 2 flax / chia eggs.

Don't be mislead by the size of these beauties, they pack a mean nutritional punch. 🥊
Lying somewhere between a sprout and a baby leaf vegetable, they hold a much higher nutrient count than both🌱
Sprinkle them on a salad, soup, toast or even blend them into a sauce like I did in my homemade vegan pesto. (few posts back)
If you live in and around Cape Town you can get these babies delivered by . A small eco farm out in Durbanville who also now deliver veggies boxes, Olive Oils, sourdough and more.

Do you ever make a cuppa tea or coffee PURELY to dunk your rusk or biscuit into? 🙋🏻I have! haha perhaps my British roots coming out 🇬🇧

Definitely an adventure making these, as had ZERO clue of what I was doing & how to make such a thing 🙈 The prepping, baking and then drying out was a bit of a learning curve (cue me waking up and checking the oven at 2am) but I'm pretty stocked with how they came out.
The tweak I made was swopping out 1 cup of the almond flour for 1 cup of coconut flour (but added a flax egg to compensate as coconut flour absorbs liquid much more) and I would have added a little more sweetener. pour moi.
But like i said. Pretty stocked with them - And myself 😄

ZERO WASTAGE BUTTERNUT SOUP ⠀

Luckily we are still having beautiful days down here in the south but the nights have started to hold a bit of a chill ❄️⠀
So here comes the first of the winter soups. ⠀
⠀
I often struggle to find a soup without butter, cream or milk, and so I tend to make my own, and a nice big pot at that to freeze for another week. ⠀
⠀
Eating seasonally, you can look around and see Autumn is the time of the butternut. This time round I decided to add a little immune boosting twist of miso and ginger 🍲But the HIGHLIGHT OF THIS DISH is that we can use all aspects of this versatile veg. ⠀

The roasted butternut seeds & crispy skins create a delicious (and nutritious) crunchy topping to the final bowl. Who would have thought ? 🤷🏻 and not adding much more labour to the method (just longer oven time) Think nutritious GF vegetable croutons. 😉⠀
