Apple Pop Snack

Begin by slicing your apples. We like honeys-crisp and Granny Smith apples.

Take a lollipop stick and insert in the center of each apple slice.

Dip each slice in yogurt, and then sprinkle on the topping of your choice for an apple pop snack.

Place on a baking tray lined with parchment paper. Place in the freezer for 5-10 minutes or until the yogurt has slightly hardened.

Don’t forget about them in the freezer though! You don’t want the apple to freeze.

These are a crunchy yummy snack full of apple goodness. They are a great alternative to sugary suckers. Apples are a great source of soluble fiber as well as vitamins and minerals.

The toppings for apple pop snacks we love are chia seeds, shredded coconut, sesame seeds, chocolate chips and cinnamon. We used both plain yogurt and strawberry yogurt.

Peanut Butter Banana Bonbons

3 ripe and large bananas
about 1/2 cup creamy peanut butter
10 ounces chocolate chips
2 tablespoons coconut oil
1/3 cup finely chopped honey roasted peanuts
small popsicle sticks (or pretzel sticks)

Peel bananas and slice into medium-thick round slices. Top each peanut butter topped banana with a plain banana slice and press down just slightly. Insert the popsicle sticks (or pretzel sticks) into the banana sandwich. Place peanut butter pops on a parchment lined baking sheet. Place in the freezer to harden for at least 30 minutes. While the pops harden, melt the chocolate according to directions. Transfer melted chocolate mixture to a glass container. Dip the slightly hardened banana sandwiches completely in chocolate. Return them to the parchment paper and immediately sprinkle with honey roasted peanuts. After dipping all of the bananas, return to the freezer for at least 2 hours before serving. Bananas will last for a week or two in the freezer. You can also wrap them individually for storage in the freezer.

10 minute Spiralized Zucchini & Cherry Tomatoes

2 servings
Ingredients:
1/2 Tbsp extra virgin olive oil
4 garlic cloves, minced
1 lb cherry tomatoes
Sea salt and black pepper, to taste
Chopped fresh basil leaves
2 medium zucchini, spiralized with thicker blade

Directions:
In a large non-stick skillet set over medium-high heat, heat the oil. Add the garlic and cook until golden, 30 seconds. Add the tomatoes, and season with salt and pepper. Reduce the heat to low. Simmer, covered, until the tomatoes soften, 10 minutes.
Increase heat again to medium-high, toss in the zucchini noodles and basil, season with sea salt and cook 2-3 minutes. Garnish with more basil & parmesan cheese if desired.
Fast food!
