No-knead Gluten-Free Focaccia Bread

This is something I love having for lazy lunches or when hosting friends with a grazing platter.

Ingredients
2 1/2 cups all-purpose gluten-free flour
2 tbsp olive oil
1 tbsp sugar
Salt, to taste

1 cup + 2 tbsp water
1 x 7g sachet active dry yeast
1 tbsp sugar

For toppings, you can use:
Olives
Rosemary
Pepita seeds
Seasoning of choice

How to make it: In a small bowl add the warm water, active dry yeast and sugar and allow to sit for 10 minutes. In a medium bowl combine the gluten free flour, sugar and salt. Add the oil and yeast/water mixture and combine. Your dough will be shaggy, sticky looking, let it sit for five minutes to absorb the moisture. Transfer the focaccia dough to a greased baking pan, drizzle some olive oil on top. Gently stretch it out to fit it into the pan. Cover the pan with a clean towel and allow for it to rise in a warm space until it has doubled in size. Pre-heat the oven to 200C. Use your fingers to 'dimple' the bread. Top with the feta cheese, olives and seasoning. Bake for 25-30 minutes. Once it is ready let it cool down for 5 minutes in the pan, remove it from the pan and allow it to cool completely.
