Happy May Day everyone. It’s another beautiful day. The elderflower is starting to blossom and the bluebells are at the height of their beauty. But did you know that the humble dandelion is the only plant that represents the sun, the moon and the stars?

And who, as a child, didn’t pick a dandelion clock and blow the seeds to flutter away on the wind, wondering where they would land and grow?
